RESUMOO Brasil possui uma diversidade de frutas que são apreciadas em todo o mundo, porém existem frutas nativas e exóticas que são pouco exploradas comercialmente e que apresentam um grande potencial para o desenvolvimento de novos produtos, de aparência e sabores diferentes. Diante do exposto, o presente trabalho teve como objetivo desenvolver um néctar misto a base de mangaba e maracujá do mato, adoçado com mel de Apis melífera e avaliar a estabilidade físico-química e microbiológica durante 150 dias de armazenamento a temperatura ambiente (28±4 o C.). Foram elaboradas quatro formulações através do teste de preferência que foi escolhida a formulação contendo 20% de Mangaba com 20% de maracujá do mato. As análises foram realizadas em dois períodos: a) Antes do armazenamentoanálise sensorial e intenção de compra b) durante o armazenamento-sólidos solúveis totais, pH, acidez titulável, vitamina C, açúcares e cor, além das análises microbiológicas. Diante dos resultados pode-se concluir que durante o armazenamento não houve variação significativa para os parâmetros pH, açúcares totais, cor L* , b* e acidez titulável, com exceção da vitamina C e açúcar redutor para p≤0,05. A bebida formulada manteve estabilidade microbiológica conforme a legislação vigente. A avaliação sensorial mostrou que a bebida teve boa aceitação pelos provadores, sendo uma boa alternativa de renda para os pequenos agricultores.
