<p><span style="font-size: medium;">A industrialização do principal resíduo da banana é a sua casca que compreende</span><span style="font-size: medium;"> aproximadamente 45% do peso total deste fruto</span><span style="font-size: medium;">. O trabalho teve como objetivo analisar o aproveitamento da casca de banana madura na alimentação animal em forma de pellet. O enriquecimento das cascas de banana foi realizado em quatro tratamentos a seguir: T</span><sub><span style="font-size: small;">1</span></sub><span style="font-size: medium;"> = Casca de banana na forma <em>in natura</em>; T</span><sub><span style="font-size: small;">2</span></sub><span style="font-size: medium;"> = Casca de banana + 2% de levedura; T</span><sub><span style="font-size: small;">3</span></sub><span style="font-size: medium;"> + Casca de banana + 2% de levedura + 1% de ureia; T</span><sub><span style="font-size: small;">4</span></sub><span style="font-size: medium;"> + Casca de banana + 2% de levedura + 2% de ureia. Foram analisadas as características químicobromatologica dos tratamentos na forma<em> in natura </em>e processada, obtendo-se valores proteicos de 5,28%; 12,33%; 12,33% e 24,09%, respectivamente. O enriquecimento dos pelletes de casca de banana com a levedura e/ou ureia aumentaram substancialmente o valor proteico destes em relação deste na forma<em> in</em> <em>natura.</em> Os tratamentos que foram adicionados os níveis de ureia (1 % e 2%) reduziram os conteúdos de FDN, FDA, CHOT, CNF, CEL e HC nos <em>pelletes</em>, porém deferiram entre si (P<0,005). Para os teores de MS e PB houve um aumento significativo (P<0,005) em relação aos <em>pelletes</em> na forma <em>in natura</em>, resultando em uma elevada eficiência da bioconversão do processo.</span></p><p> </p>
A indústria de suco de laranja produz como subproduto o bagaço e a polpa de laranja que compreende 50% do total da fruta. O trabalho teve como objetivo analisar o aproveitamento do resíduo da extração do suco de laranja na alimentação animal em forma de pellet. O enriquecimento do bagaço de laranja foi realizado em seis tratamentos: na forma in natura; bagaço de laranja + 2% de levedura; bagaço de laranja + 2% de levedura + 1% de ureia; bagaço de laranja + 2% de levedura + 2% de ureia; bagaço de laranja + 2% de levedura + 3% de ureia e por ultimo bagaço de laranja + 2% de ureia, obtendo valores proteicos de 14,2%; 15,9%; 23,4%; 25,0%; 26,6% e 16,8% respectivamente. O enriquecimento dos péletes de bagaço de laranja com a levedura e/ou ureia aumentaram substancialmente o valor proteico destes em relação na forma in natura. Os tratamentos que foram adicionados diferentes níveis de ureia (1, 2 e 3%) reduziram os conteúdos de FDN, FDA, CHOT, CNF, CEL e HC nos péletes, porém deferiram entre si (P<0,005). Para os teores de MS e PB houve um aumento significativo (P<0,005) em relação aos péletes na forma in natura, resultando em uma elevada eficiência da bioconversão do processo. RESUMO Dentro do agronegócio, uma área na qual o Brasil se destaca é a produção de frutas. Dados de 2019, colocam o país como o terceiro maior produtor de frutas do mundo. Há uma grande diversidade na produção de frutas do Brasil e entre essas frutas, o cajá-manga (Spondias dulcis Parkinson), nativa da Polinésia, conhecido popularmente pelos nomes cajarana, taperebá-dosertão e cajá-anão, vem sendo explorada de forma extrativista e em plantios espontâneos na região Nordeste do Brasil. Os frutos apresentam boas características para a industrialização, devido ao sabor e aroma típicos e podem ser utilizados tanto in natura quanto na forma processada. Neste contexto, decidiu-se utilizar a polpa do cajá-manga como ingrediente para o desenvolvimento do sorvete com diferentes porcentagens de polpa. Foram elaboradas duas formulações de sorvete com diferentes quantidades de polpa (30% e 35%). Para a avaliação sensorial foram recrutados aleatoriamente 30 provadores não treinados, de ambos os sexos, com idade entre 14 e 21 anos. As formulações com 30% (F1) e 35% (F2) de polpa de cajámanga foram avaliadas quanto a intenção de compra, cor, textura e sabor, utilizando escala hedônica. Avaliou-se a intenção de compra, utilizando-se escala de cinco pontos. O sorvete de cajá-manga na formulação 2, obteve a melhor avaliação como também 50% dos provadores compraria certamente o produto. Palavras-chave: Matéria-prima. Novos produtos. Avaliação. Aceitação.
RESUMO A Opuntia ficus-indica tem-se destacado como principal produtora de frutos e forragens, motivo pelo qual tem sido bastante pesquisada. Além desta espécie, no semi-árido do Nordeste é encontrada a Tacinga inamoena, popularmente conhecido como quipá ou gogoia, planta nativa, cujo fruto, também tem sido utilizado pelo agricultor como alternativa alimentar. No presente trabalho propõe-se avaliar física e físico-quimicamente, frutos em diferentes estádios de maturação, a fim justificar seu potencial nutricional e industrial. As análises físicas realizadas foram peso unitários, comprimento e largura, e as físico-químicas, envolveram determinações de sólidos solúveis, pH, acidez titulável, açúcares redutores e relação brix/acidez. Os resultados encontrados estão em consonância com a literatura disponível e reafirmam a viabilidade da agroindustrialização dos frutos da gogoia. In addition to this species, in the semi-arid northeast is foundtacingainamoena, popularly known as quipáor gogoia, native plant, whose fruit has also been used by the farmer as a food alternative. In the present work, it is proposed to evaluate physically and physicochemically fruits at different stages of maturation, in order to justify their nutritional and industrial potential. The physical analyses performed were unit weight, length and width, and the physicochemical analyses involved determinations of soluble solids, pH, titratable acidity, reducing sugars and brix/acidity ratio. The results found are in line with the available literature and reaffirm the viability of agroindustrialization of gogoa fruits.
