Este estudo teve como objetivo avaliar as alterações nutricionais e alimentares ocorridas em pacientes submetidos ao procedimento de desvio gástrico em Y de Roux (RYGB), através de coleta em prontuário do pacientes atendidos na JRJ Serviços Médicos e Cirúrgicos Ltda (Clinica Jorge Chalhub), no município de Salvador-Ba, no período de outubro de 2019 a julho de 2020. 43 mulheres e 27 homens foram avaliados no préoperatório e após 6 meses de acompanhamento. Para obtenção dos dados alimentares foram utilizados os métodos de registro alimentar de 3 dias e questionário de frequência do consumo alimentar (QFCA), os dados referentes às mudanças na composição corporal foram obtidos por impedância bioelétrica (BIA) e para avaliação bioquímica foram utilizados dados dos exames de rotina do pré e pós-operatório. Os resultados revelaram baixa ingestão de nutrientes e calorias no pré-operatório além de alta prevalência de hipertensão arterial e dislipidemia. Após 6 meses de cirurgia houve perda média de 41,4 kg (51,4%) do excesso de peso em virtude da perda de 27,8 kg de massa gorda (40,5%), mas também da perda indesejável de 13,7 kg de massa magra (17,5%), com concomitante baixa ingestão proteica. Entretanto, não houve correlação entre perda de massa magra e baixo consumo de proteínas. Com a esperada perda ponderal, houve melhora das complicações associadas à obesidade, nos níveis pressóricos e nos níveis de colesterol total, porem aumentada incidência de alopecia. A suplementação de vitaminas e minerais mostrou-se adequada para manter os níveis séricos de ferro, vitamina B12 e folato adequados. Em Conclusão, embora a maioria das complicações ligadas à obesidade tenha sido melhorada com a perda de peso após a cirurgia, especial atenção deve ser dada ao consumo e suplementação de cálcio e proteína nesses pacientes.
