RESUMO -Frutos não tradicionais como os deCereus jamacaru DC são fontes de fitonutrientes importantes para a saúde, além de constituir uma alternativa alimentícia em épocas secas até para os animais. Este trabalho teve por objetivo avaliar a qualidade nutricional e funcional de frutos de mandacaru em diferentes estádios de maturação (Verde Claro (VC), Inicio de Pigmentação (IP), Inicio de Pigmentação Vermelho (IPV), Pigmentado Vermelho (PV), Totalmente Vermelho (TV)) , visando agregação de valor através da diversificação de seus usos na região e explorando o potencial dos frutos como alimento funcional. Os frutos de mandacaru foram colhidos no município de Campina Grande-PB e Barra de Santa Rosa-PB. O delineamento experimental utilizado foi inteiramente casualizado e doze frutos (quatro repetições de três frutos) foram colhidas de cada estádio de maturação. Os dados obtidos das variáveis físicas, físico-químicas, polifenóis extraíveis totais e atividade antioxidante foram submetidos à análise de variância pelo teste F e as médias foram comparadas pelo teste de Tukey em até 5% de probabilidade. Os frutos de mandacaru apresentam elevado rendimento de polpa no estádio de maturação maduro (TV-totalmente vermelho) e coloração de casca que evoluiu de verde pigmentado para a coloração avermelhada com o avanço da maturação. Os sólidos solúveis, a relação SS/AT e pH dos frutos aumentou com o avanço da maturação, enquanto a acidez titulável diminuiu, todos estes tendendo a se estabilizar no estádio IPV, indicando ser este o ponto de colheita. Isso torna esses frutos adequados para o consumo fresco e para serem processados. Os frutos de mandacaru apresentam um alto conteúdo de polifenóis extraíveis totais em todos os estádios de maturação e uma elevada atividade antioxidante total, justificando assim o seu consumo, além de servir como estímulo ao seu melhor aproveitamento. RESUMO -A umbugueleira produz frutos com amplas possibilidades de utilização que, embora subexplorados, têm grande potencial socioeconômico. Dessa forma, o objetivo deste estudo foi avaliar o desenvolvimento e a fisiologia da maturação em frutos da umbugueleira. As inflorescências foram marcadas em seis plantas, no período da antese, e o fruto (umbuguela) foi avaliado em intervalos regulares até a abscisão da planta. O ciclo de desenvolvimento da umbuguela, da antese até o início da abscisão, abrange 157 dias; a massa, o volume, o comprimento e o diâmetro apresentam aumentos rápidos até 117 dias após a antese (DAA), estabilizando-se até o final da maturação. O padrão respiratório do fruto foi climatérico, com pico aos 147 DAA. A coloração evoluiu do verde para o amarelo e, no pós-climatério, para o vermelho-púrpura. A relação SS/AT e pH aumentaram, e a AT diminuiu durante a maturação. O ponto ideal de colheita para o armazenamento ocorreu dos 127 aos 137 DAA, com início da coloração amarela a amarelo predominante. DEVELOPMENT, PHYSIOLOGY OF MATURATION, AND INDICATION OF HARVEST POINT OF UMBUGUELA TREE FRUITS (Spondias sp.)ABSTRACT -The umbuguela tree produces fruits with wide possibilities of utilization and, although underexploited presents a great socioeconomic potential. Thus, the objective of this study was to evaluate the development and the physiology of maturation of fruits of the umbuguela tree. The inflorescences were tagged in six plants at the anthesis period and the umbuguela fruit evaluated at regular intervals until the onset of fruit abscission. The cycle of development of the umbuguela fruit, from anthesis until abscission, covers 157 days; fruit mass, volume, length, and diameter showed rapid growth up to 117 days after anthesis (DAA), stabilizing until the end of maturation. The respiratory pattern of the fruit was climacteric, with peak at 147 DAA. The coloration advanced from green to yellow and, at the post-climacteric, to purple red. The SS/TA ratio and pH increased, and the TA decreased during maturation. The ideal harvest point for storage was from 127 to 137 DAA, at the beginning of the yellow to predominant yellow coloration. For fresh consumption, the ideal harvest point was from 147 DAA (yellow with reddish tones).
RESUMO -Este trabalho teve por objetivo avaliar a qualidade de manga 'Tommy Atkins' da Produção Integrada (PI) recoberta com fécula de mandioca (F) associada a óleos essenciais e quitosana. A manga foi colhida na maturidade comercial de pomar certificado na PI. Os recobrimentos foram: Controle; F a 3%; F a 3% + erva-doce a 0,9% (FED); F a 3%+ orégano a 0,5% (FO), e F a 2% + quitosana a 2% (FQ). As mangas recobertas foram mantidas por 20 dias a 12+1°C e 80 + 2% U.R. e, em seguida, transferidas para a condição ambiente (24+2°C; 75+4% U.R) por mais 12 dias, simulando a condição de mercado. A combinação FQ retardou o amadurecimento, mantendo a coloração, os teores de sólidos solúveis e de acidez, apresentando mangas com intenção de compra e sabor superiores ao controle. QUALITY OF 'TOMMY ATKINS' MANGO FROM INTEGRATED PRODUCTION COATED WITH CASSAVA STARCH ASSOCIATED WITH ESSENTIAL OILS AND CHITOSANABSTRACT-This study had as objective to evaluate the quality of 'Tommy Atkins' mango from the Integrated Production (IP) coated with cassava starch (S) associated with essential oils and chitosan. Mango was harvested, at the commercial maturity, from a certified orchard by the Mango IP. The coatings were: Control; S 3%; S 3% + Foeniculum 0.9% (SF); S 3% + Origanum 0.5% (SO), and S 2% + Chitosan 2% (SCH). Coated mangos were stored for 20 days at 12+1°C and 80 + 2% RH and, following, transferred to room conditions (24+2°C; 75+4% RH) for more 12 days, simulating the marketing condition. The combination SCH delayed ripening, maintaining the coloration, soluble solids, and acidity contents, providing mangos with purchase intention and flavor higher than the control.
