RESUMO. Fonte de proteína de alta qualidade, o pescado é um dos principais alvos de fraude na indústria alimentícia. A prática feita pela indústria do pescado visando lucro ocorre quando há modificações nas características do produto sem concordância oficial, a exemplo de troca de espécies, glaciamento não compensado, erro na rotulagem e adição de aditivos. Este trabalho apresenta uma revisão literária com dados dos principais artigos relacionados às principais fraudes praticadas na indústria do pescado.Palavras chave: Troca de espécies, glaciamento, erro de rotulagem Fraud in the seafood processingABSTRACT. High quality protein source, seafood is one of the main targets of fraud in the food industry. The practice made by the seafood for profit industry, occurs when there are changes in the characteristics of the product without official agreement, such exchange of species, glazing not offset error in labeling and addition of additives. A conscientização das necessidades humanas, do culto ao bem estar, à saúde e à segurança alimentar fez elevar o consumo mundial de pescado nas últimas décadas (Barbosa, 2016). Pelo fato do pescado ser um alimento que está em alta, possuindo um alto valor comercial e da grande diversidade de espécies semelhantes, é alvo fácil para práticas fraudulentas, na qual podem acontecer em toda cadeia produtiva, desde o processamento à comercialização (Gonçalves, 2011).Segundo Riedel (1992), fraude é tudo aquilo que se desvia das características normais de determinado alimento. No entanto, o termo "características normais" é um tanto vago e discutível do ponto de vista comercial e industrial.
The rapid growth associated with high tolerance to adverse environmental conditions has made the Pacific oyster, Crassostrea gigas, the species chosen for cultivation in Santa Catarina, Brazil. Variance components and genetic parameters for survival and growth of Pacific oyster families were estimated using data from half-sibs (n = 41) and full-sibs (n = 2) families. In the juvenile stage and at harvest, we measured total weight and shell height of 80 animals per family. In addition, at harvest we measured yield (total weight of animals per floor of lantern) and calculated survival. The covariance components were estimated in the program AIREMLF90 using an animal model.The heritabilities (Standard Deviation) at harvest were: 0.26 (0.05) (individual weight (SD)), 0.34 (0.05) (height), 0.54 (0.09) (yield), 0.58 (0.08) (average individual weight) and 0.16 (0.07) (survival). Genetic correlations were 0.88 (0.03) (between individual weight and height), 0.98 (0.03) (between yield and average individual weight), 0.58 (0.39) (between average individual weight and survival) and 0.47 (0.36) (between yield and survival). The heritability and genetic correlations suggest that gains could be obtained for the studied traits. The yield and mean individual weight should be used as a criterion for selection.
No processo de deterioração do pescado são observadas algumas mudanças na estrutura e na composição dos tecidos, essas mudanças podem ser observadas por alterações que ocorrem no odor, firmeza, consistência da carne, aparência externa e propriedades sensoriais que aliados a análises químicas permitem mensurar se o pescado está apropriado ou não para o consumo humano (ORDÓÑES et.al., 2005). A partir disso, surge a necessidade de pesquisar métodos e alternativas para se preservar as características do produto fresco e aumentar a vida de prateleira dos mesmos mantidos sobre constante refrigeração, desde a captura até a comercialização. Nesse sentido, o presente estudo tem como objetivo analisar e comparar a influência da imersão do polvo Octopus insulares em diferentes aditivos alimentares: lactato de sódio, ácido lático e tripolifosfato de sódio em relação as características físicas durante 15 dias de armazenamento sob refrigeração. Fundamentação Teórica O Octopus insulares é uma espécie comumente encontrada no litoral brasileiro, inicialmente foi classificada como Octopus vulgares, porém em 2008 foi descoberta por LEITE (2007) como uma nova espécie. Possui características semelhantes, porém é uma especia mais robusta e de menor tamanho, tendo o comprimento do manto ("cabeça" dos moluscos) em torno dos 12 cm. A espécie habita arrecifes de rochas e corais em diversas ilhas do nordeste brasileiro (ERENO, 2009).
IntroduçãoAlguns alimentos quando armazenados sob refrigeração preservam algumas características similares aos frescos, entretanto, o polvo necessita da combinação de vários métodos de conservação já que possui uma vida útil bastante curta, em torno de 7 a 8 dias, que está relacionado ao fato de possuírem uma grande quantidade de enzimas endógenas e de origem bacteriana que produzem a rápida degradação protéica, proporcionando uma rápida degradação (LOUGOVOIS et al., 2007;HURTADO et al., 1999).
