RESUMOOs produtos industrializados ocupam uma parcela cada vez maior do mercado de alimentos. Eles são práticos e possuem mais prazo de validade que produtos in natura, facilitando o armazenamento. Entretanto, para que o prolongamento de sua vida útil seja bem sucedido, é feita a adição de múltiplos aditivos para torná-lo com prazo de validade compatível à mercantilização. Considerando a vida moderna, cada vez mais aditivos têm sido empregados e, atualmente, é quase impossível encontrar um alimento sem eles. O objetivo desta pesquisa é construir um banco de dados de indicadores de aditivos sintéticos em alimentos industrializados no país, mais especificamente em biscoitos, comparar os componentes alimentares de diferentes marcas, a partir dos seus rótulos, e associar o consumo desses alimentos a possíveis doenças. Por se tratarem de substâncias químicas, intencionalmente, adicionadas aos alimentos, torna-se fundamental conhecer suas propriedades, de maneira a garantir uso adequado e seguro. Para tanto, é necessário que sejam utilizados indicadores que, produzidos com regularidade, possam assegurar a verificação de tendências temporais, contribuindo com o desempenho da qualidade de vida da população, tanto na identificação de suas matérias primas, quanto na minimização dos prejuízos causados pelos alimentos quando consumidos sem as informações necessárias, tendo sido produzidos com aditivos químicos. Ainda que os estudos expostos não indiquem fatores que relacionem diretamente doenças relacionadas a seres humanos e à ingestão de aditivos, é necessário que haja precaução na ingestão, visto que a exposição aos aditivos é dada pela totalidade de produtos consumidos, não devendo exceder a ingestão diária aceitável. They are practical and have more shelf life than fresh products, facilitating storage. However, for the prolongation of life to be successful, it is made adding multiple additives to make it compatible with an expiration date to commercialization. Considering the modern life, more and more additives have been employed and is currently almost impossible to find a food without them. The objective of this research is to build a bank of synthetic additives indicator data in processed foods in the country, more specifically in cookies, compare the food components of different brands from their labels, and link the consumption of these foods to possible diseases. Because these chemicals intentionally added to food, it is essential to know its properties in order to ensure proper and safe use. Therefore, it is necessary that indicators are used that produced regularly, can ensure the verification of temporal trends, contributing to the performance of the population's quality
