Овес, в основном, выращивается в районах с достаточным количеством осадков и, традиционно, используется на корм животным. Из-за его высокой питательной ценности овес все больше используется и на пищевые цели. Национальным институтом сельскохозяйственных исследований (ИНРА) была разработана программа, направленная на создание новых тетраплоидных культурных линий овса с использованием дикого вида AAvena magna Murph. et Terr., имеющих высокую питательную ценность для потребления человеком. Девять полученных тетраплоидных культурных линий овса с A. magna были изучены по большому числу биохимических признаков. Были проведены биохимические анализы, включая определение зольных элементов, белка, фракций волокон, липидов, углеводов и минеральных элементов. Линии сравнивались друг с другом и двумя дикими родительскими линиями A. m agna с использованием статистического метода (ANOVA). Статистический анализ выявил различия в химическом составе изученных линий. Были найдены существенные различия (P <0,001) по содержанию белков (11,45-13,92%), жира (3,89-10,15%), углеводов (48,99-57,86% ) и золы (1,7-3,73% ) в пленчатых зерновках овса. Анализ общих фракций волокон (NDF, ADF, ADL и CF) показал наличие существенных различий между полученными линиями. По содержанию белка наибольшие показатели были у линий, имеющих 13,62% и 13,92%. Кроме того, кальций, фосфор и калий были наиболее важными основными макроэлементами в зерновке овса, в то время как железо, марганец и цинк были доминирующими микроэлементами. Результаты данного исследования показывают, что марокканские культурные тетраплоидные линии овса имеют довольно высокий уровень питательных веществ с хорошей энергетической ценностью и могут служить источником полезных соединений в питании человека.
Physico-chemical, functional and antioxidant capacities of 26 oat (Avena sativa L.) lines and cultivars were investigated. The results showed that the contents were considerably variable within samples, starch concentration (44,83-63,79%), carbohydrate (42,08-62,65%), protein (9,67-17,44%), fat (3,06-10,96%), β-glucan (1,37-6,05%) and ash (1,22-5,38%). The analysis of fatty acids composition indicated that, palmitic acid, oleic acid, linoleic acid, stearic acid and linolenic were the major fatty acids in oat lipids, and that the contents of total UFA in assessed material varied between72, 29-80,11%. Moreover, the phenolic content varied from 23,1 to 56,5 mg GAE/100g, carotenoids content range from 0,98 to 4,34 µg β-carotene equivalents/g and antioxidant activity, evaluated as DPPH radical scavenging activity, from 12,2 to 46,7%. The Protein profiles showed nearly identical nature of electrophoresis patterns, indicating no eventual change in protein quality. It could be concluded here that the flour of issue from these cultivars provide health benefits and high added value, if included as an ingredient for making new functional food products to meet the demands of health conscious generation.
A potential in improving nutrition and health is the consumption of high balanced whole grains. A breeding program was launched by the National Institute for Agricultural Research (INRA-Morocco), aiming to develop new domesticated tetraploid oat lines of Avena murphyi Ladiz., with high nutritional benefits. A sequence-based diversity study was conducted on ten tetraploid oat lines of A. murphyi to shed light not only on the importance of domesticating wild oat species for crop improvement but also to highlight the nutritional traits of those oat lines. In this study, we assessed the lines for some grain nutritional traits, such as groat contents of proteins and lipids as well as ash, fiber fractions, carbohydrates, and minerals.The obtained results showed a wide range of chemical contents among lines. The results revealed a high significant difference (P < 0.001) in the groat contents of proteins (11.46–15.12%), fat (4.14–10.14%), carbohydrates (48.68–57.38%), and ash (2.71–5.18%). Analysis of total fiber fractions (NDF, ADF, ADL and CF), showed the presence of significant differences between the assessed lines. The lines A. murphyi 8 and 9, recorded the highest groat protein contents of 15.12% and 13.66%, with an interesting macroelement profile, mainly magnesium and phosphorus, and iron and manganese as minor mineral profile.Due to their biochemical composition, Moroccan domesticated tetraploid oat lines of A. murphyi offer many opportunities to improve oat cultivation in Morocco and serve as an excellent raw material for foodstuffs formulation.
