The aim of this study was to develop a potentially synbiotic beverage fermented with Lactobacillus casei LC-1 based on aqueous extracts of soy and quinoa with added fructooligosaccharides (FOS). Five formulations with differing proportions of soy and quinoa extracts were tested. The viability of the microorganism, the pH, and the acidity of all formulations were monitored until the 28th day of storage at 5 ℃. The chemical composition of the extracts and beverages and the rheological and sensory properties of the final products were analyzed. Although an increase in acidity and a decrease in pH were observed during the 28 days of storage, the viability of the probiotic microorganism was maintained at 10(8) CFU·mL(-1) in all formulated beverages throughout the storage period. An increase in viscosity and consistency in the formulations with higher concentrations of quinoa (F1 and F2) was observed. Formulation F4 (70% soy and 30% quinoa extracts) showed the least hysteresis. Formulations F4 and F5 (100% soy extract) had the best sensory acceptance while F4 resulted in the highest intention to purchase from a group of 80 volunteers. For chemical composition, F3 (50% soy and 50% quinoa extracts) and F4 showed the best results compared to similar fermented beverages. The formulation F4 was considered the best beverage overall.

In this study, we evaluated the effects of the storage time on the physicochemical properties, bioactive compound content, and antioxidant capacity of jam prepared from grape peel extract to explore its potential as a supplementary food and/or functional ingredient. The ethanolic extract from Syrah var. grape peel exhibited high bioactive compound concentrations and antioxidant activity. The jam stability (prepared with 8.9% of extract) at 14°C was evaluated at 0, 15, 30, 45, and 60 days. The jam was found to contain high concentrations of polyphenolic compounds (137.0 ± 3.2 mg of gallic acid equivalent/100 g), total flavonoids (128.5 ± 23.0 mg of equivalent/100 g), and total anthocyanins (92.5 ± 4.0 mg of cyanidin equivalent/100 g). However, a large reduction in the flavonoid (70%–90%), anthocyanin (29%–35%), and phenolic (23%–30%) content was observed during storage. The free radical‐scavenging activity (DPPH − ), ferric reducing antioxidant power (FRAP), and β‐carotene‐linoleic acid assays revealed the great antioxidant potential of the jam prepared from grape peel extract, which exhibited significant levels of radical‐neutralizing activity, especially as determined by the DPPH method with EC 50 values ranging from 2.3 ± 0.1 to 3.9 ± 0.1 µg/ml. High R 2 values ( p > 0.90) were obtained for the correlation between the DPPH results and the concentrations of the compounds of interest. In summary, the high bioactive compound contents and antioxidant capacity of the jam produced from grape peel suggest that it may provide health benefits as a source of natural antioxidants upon incorporation to several food industry products.

BACKGROUND: The peel of yellow passion fruit is as an agro-industrial waste of great environmental impact, representing more than 50% of the total weight of the fruit. For this reason, and also considering its importance as a source of functional components such as pectin, this organic waste is increasingly attracting the attention of researchers. The aim of this study was to investigate the physico-chemical composition and physical properties of this material, which may be of interest to the food industry.

Background The high consumption of acetaminophen leads to high concentrations in surface water causing impacts on aquatic organisms, which is highlighting the need for investigation of alternative water and wastewater treatments. Therefore, the present study objective was to evaluate the adsorption capacity of acetaminophen onto Moringa oleifera Lam. seed husks after chemical and thermal treatment. Results The characterization of the adsorbent revelaed heterogeneous morphology with the presence of micro‐ and mesopores. Adsorption studies showed that the adsorption did not altered between pH 3 and 9, and that there was no significant effect of the ionic strength, indicating that the mechanism does not involve electrostatic interactions. In fact, Fourier transform infrard spectra showed that acetaminophen was adsorbed by hydrogen bonds and π‐stacking. The kinetic data were adjusted to the pseudo‐first‐order model, indicating an equilibrium time of 18 h. The equilibrium study showed that adsorption occurred in a monolayer and was favoured by the increase in temperature. The maximum adsorption capacity was 17.48 mg g−1, at 318 K, higher than some capacities found in the literature. The thermodynamic parameters indicated that the process was spontaneous, endothermic and physical. Conclusions The characteristics and results found compared to the recent literature verified the possibility of applying this residue as a low‐cost adsorbent for the removal of acetaminophen. © 2019 Society of Chemical Industry
