Em busca de saudabilidade, o consumo de frutas é crescente, já que são ricas em compostos bioativos, tais como compostos fenólicos, flavonoides, carotenoides, vitaminas, etc (SHINWARI; RAO, 2018).Porém, é fato que a umidade desses alimentos é alta, no geral acima de 80%, sendo, então, altamente perecíveis.A industrialização de frutas e hortaliças é realizada em diversas etapas, dentre elas: colheita, transporte, seleção, lavagem, sanitização, processamento, embalagem e armazenamento. Durante o armazenamento e o transporte estimam-se perdas de 25% a 30% (OLIVEIRA, 2015), sendo pertinentes operações que reduzam esse valor.Reduzir as perdas durante a colheita e pós-colheita de frutas frescas, a partir do uso de partes sãs de frutas consideradas impróprias para comercialização, aumentar sua vida de prateleira e disponibilidade ao longo do ano é de interesse de quaisquer indústrias de alimentos. Muitas são as operações disponíveis para tanto, tais como produzir geleias.Na produção de geleias, o uso de calor, açúcar em altas concentrações e acidificação contribuem para aumentar a pressão osmótica do meio e reduzir sua atividade de água, resultando em ambiente inapropriado ao desenvolvimento de microorganismos (GAVA; SILVA; FRIAS, 2008), podendo, portanto, ser considerada uma técnica de conservação de frutas.Segundo a Resolução nº12 de 1978 do Ministério da Saúde, que dispõe sobre padrões de identidade e qualidade para alimentos: "Geleia de fruta é o produto obtido pela cocção, de frutas, inteiras ou em pedaços, polpa ou suco de frutas, com açúcar e água e concentrado até consistência gelatinosa" (BRASIL, 1978).A pectina é o polissacarídeo usualmente responsável pela formação de géis nas geleias, sendo usualmente adicionada durante sua cocção. O termo pectina diz respeito a uma família de compostos de ácido galacturônico ou galacturonoglicano, solúveis em água, que contém éster metílico em graus de neutralização variados, o qual forma géis (DAMODARAN; PARK;FENNEMA, 2010). Shinwari e Rao (2018) afirmam que, apesar de boa parte das frutas conter ácidos e pectina, esses componentes devem ser adicionados às geleias para atingir um valor mínimo de 1% de pectina e pH 3,0 para formar uma rede de gel consistente e característica. Oetterer, Regitano-D'Arce e Spoto (2006) apontam que nas geleias de frutas ocorre o equilíbrio entre o ácido, a pectina e o açúcar, originando um produto gelatinizado.
