This study was carried out to evaluate the effects of different nutritional strategies at growing and finishing phases on carcass and meat characteristics from 24 crossbred steers predominatly Holstein, slaughtered at 15 months of age and with 395.00kg of body weight. At the growing phase, the animals were maintained on Brachiaria brizantha pasture with two levels of supplementation in amounts equivalent to 0.5 or 1.0% of body weight. Subsequently, the animals were finished in feedlot with diets composed of 50 or 80% of concentrate. The high level of the concentrate at the finishing phase increased significantly (P<0.05) the hot carcass yield (50.16 vs. 48.62%). The lowest level of supplementation at the growing phase resulted in higher (P<0.05) percentage of carcass fat (25.61 vs. 23.39%) but it did not influence the percentage of muscle and bone. The high level of supplementation at the growing phase provided higher (p<0.05) meat tenderness, required less shear force (4.72 vs. 6.66kg cm-3) and lighter red meat (3.88 vs 2.89 points). The high feeding level during the growing phase was more interesting because it affected positively some important carcass and meat characteristics, especially tenderness.
ResumoObjetivou-se avaliar o desempenho bioeconômico de novilhos alimentados em confinamento com dietas com elevada proporção de concentrado (80%) contendo diferentes níveis de grão de milheto moído em substituição ao grão de milho moído. Foram utilizados 89 novilhos não castrados, mestiços europeu-zebu, com peso médio inicial de 317,8±15,1kg e idade média inicial de dois anos, distribuídos aleatoriamente em dietas com diferentes níveis de substituição do milho pelo milheto (0, 33, 66 e 100%). Os animais foram alojados em 16 baias coletivas. O delineamento experimental foi o inteiramente casualisado, com quatro tratamentos e quatro repetições (baias). O consumo de nutrientes, exceto fibra em detergente neutro e carboidratos não fibrosos, não diferiu (P>0,05) entre as dietas testadas. O ganho de peso médio diário, o peso corporal e o escore corporal final não foram alterados (P>0,05) pelo aumento do nível de milheto na dieta. A conversão alimentar aumentou em 0,0048 kg de matéria seca/ kg de ganho de peso para cada ponto percentual a mais de milheto na dieta. O custo total diminuiu linearmente (P<0,05) com o aumento do nível de milheto na dieta, reflexo da redução linear do custo com alimentação. Em função disso, o lucro da terminação de novilhos em confinamento aumentou R$ 0,675 a cada ponto percentual a mais de milheto em substituição ao milho da dieta. O milheto pode substituir totalmente o milho em dietas com elevada proporção de concentrado para bovinos confinados, possibilitando redução do custo de produção e aumento do lucro. ResumoObjetivou-se avaliar as características de carcaça de tourinhos mestiços europeus ou zebuínos, alimentados em confinamento com rações com elevada proporção de concentrado (80%) contendo diferentes teores de grão de milheto moído em substituição ao grão de milho moído (0, 33, 66 e 100%). Foram confinados, em 16 baias coletivas, 45 tourinhos com predominância genética Aberdeen Angus e 44 tourinhos com predominância genética Nelore, com peso médio inicial de 317,8 e 320,7 kg, respectivamente, e 21 meses de idade. Ao final do período de confinamento foram abatidos seis animais de cada grupo genético, escolhidos de acordo com o peso corporal e o grau de acabamento médio de cada tratamento. O delineamento experimental foi inteiramente casualizado, com os tratamentos em arranjo fatorial 4x2, com seis repetições. A substituição do grão de milho pelo grão de milheto não influenciou significativamente o peso ao abate (480,4 kg), peso de carcaça quente (259,5 kg), rendimento de carcaça quente (54,1 %) e espessura de gordura subcutânea (3,95 mm). Tourinhos com predominância genotípica Aberdeen Angus apresentaram valores significativamente superiores para peso ao abate (507,6 vs 453,3 kg), peso de carcaça quente (269,6 vs 249,3 kg) e área do músculo longissimus dorsi (65,34 vs 56,83 cm 2 ), porém, foram inferiores quanto ao rendimento de carcaça quente (53,2 vs 55,0 %). O grão de milheto pode ser utilizado em substituição ao grão de milho, pois não altera as principais características de carcaça de interesse econômico de novilhos terminados em confinamento. Carcass and meat characteristics of 48 Nellore heifers at 24 to 30 months of age, with an initial weight of 263.4 ± 13.9 kg, were evaluated. The experiment was set up as a completely randomized design with four treatments, which consisted of four slaughter-weight classes, namely <340, 340-370, 370-400, or >400 kg. Back fat thickness was not influenced (p > 0.05) by slaughter weight in any of the forms it was expressed (mm or %), averaging 5.3 mm. Loin eye area in cm2 increased (p < 0.05) with the increase in slaughter weight. Animals slaughtered at a live weight (LW) of more than 400 kg showed better (p < 0.05) carcass conformation than the other experimental groups (9.8 points). Heifers slaughtered at over 400 kg LW had a more compact (p < 0.05) carcass (1.65 cm kg-1 cold carcass). The marbling degree of meat was lower (p < 0.05) in the animals slaughtered at less than 340 kg LW. In conclusion, cull heifers must not be slaughtered at a LW of less than 340 kg and slaughter weights greater than 400 kg have positive implications on important carcass characteristics, notably conformation and marbling.
