A utilização de cascas de maracujá e pitaia como agente geleificante se apresenta alternativa de sustentabilidade para produção de geleias, pois essas são subprodutos, geralmente sem uso industrial, e apresentam alto teor de pectina. O presente estudo teve por objetivo produzir geleias com substituição de pectina industrial pela casca de maracujá e de pitaia, ambas em pó, como agentes geleificantes. Foram realizadas análises físico-químicas (pH, sólidos solúveis, acidez, açúcares totais, redutores e umidade) e análises visuais, das quais, obteve-se que as geleias feitas a partir das cascas de frutas tiveram resultados semelhantes à geleia tradicional, isto é, pH e sólidos solúveis (SS) dentro da faixa ideal de geleificação, espalhabilidade característica e porcentagens de açúcares e umidade com pequenas diferenças. O único problema encontrado foi a presença de grânulos não característicos do produto provenientes das cascas das frutas.
