Instant food products are extremely popular, and food industry knows numerous ways and methods of their production. To remain competitive, an instant drink production process should be efficient and flawless. The research objective was to improve the physical profile of granular instant products. The study featured a vibrating drum unit controlled segregated flows. The granulometric composition, porosity, and strength of the obtained granules were tested in a vertical vibration cl assifier. The new design of the drum with an installed classifier was able to grind larger granules. The research revealed the effect of frequency and amplitude on the porosity and strength of the granules. The rotation rate of the belt mixer had a greater effect on the agglomeration process than the amplitude and frequency of the vibrations in the generator. The porosity and strength of the granules depended on the parameters of the classifier. Therefore, the new drum design made it possible to control the operating parameters depending on the required properties of the finished product. The rational parameters were obtained as follows: frequency and amplitude of the vibration generator – 1 mm and 40 Hz, respectively; rotation speed – 7 rpm; drum tilt angle – 3°; amplitude and frequency of the classifier – 2 mm and 100 Hz, respectively. The study revealed the optimal technological parameters for a new instant drink. The new vibration classifier increased the distribution density of the granular composition.
The extensive development of craft brewing forms strong demand for technological equipment characterized by compactness, high-energy efficiency and ease of operation. Multifunctional apparatuses of low capacity and a high degree of modularity is becoming widespread. The design of 500-litre mash brewing and filtering apparatus (MBFA) offered in the article allows combining mashing, mash filtering and hopping within one technological unit. This process denies bringing inter-stage transfer of raw material to minimum values, reducing material losses and the length of the technological cycle. Besides, carrying out all brewing technological operations in one apparatus allows significantly reducing heat energy consumption due to the decrease in heat losses while heating relevant apparatuses. The offered design of MBFA is notable for directed circulation of extractant flows that forms optimal conditions for mass-transfer processes at the stage of malt mashing. Conducted brewing tests in a 50-litre apparatus proved the operability and high efficiency of the apparatus. Produced wort matched all controlled physicochemical parameters and was characterized by significant 33% decrease in turbidity and 6.5% reduction of polyphenol concentration that enhanced fermentation and made beer brightening easier improving its consumption properties at the same time. The degustation evaluation of finished beer showed the beer sample obtained from the MBFA-brewed wort had a prime soft and harmonious taste, pure flavour and saturated colour.
Выполненные ранее исследования способа экстрагирования замороженного плодово-ягодного сырья на моделях вибрационных аппаратов диаметром 0,15 м не позволили в полном объеме исследовать вопросы теплопередачи, размораживания, дробления, энергопотребления опытно-промышленной установки. В работе выполнена оценка факторов определяющих эффективность переработки замороженного плодово-ягодного сырья; анализ составляющих теплового баланса; разработка рекомендаций по конструктивному оформлению вибрационных аппаратов; анализ энергозатрат на работу вибрационных тарелок. Корпус установки диаметром 0,42 м оснащен теплообменной рубашкой, в которую заливается вода, нагреваемая трубчатыми электронагревателями. В корпусе установлена вибрационная тарелка диаметром 0,416 м, перфорированная цилиндрическими отверстиями диаметром 0,003 м, с долей свободного сечения 16,5 %. Шток и тарелка приводятся в возвратно поступательное движение в вертикальной плоскости с заданными значениями амплитуды и частоты. В аппарат загружались замороженные плоды красной или черноплодной рябины и вода, обеспечивая соотношение фаз твердого (Т) и жидкого (Ж) j = 0,2-0,4. Наличие теплообменной рубашки, оснащенной трубчатыми электронагревателями, позволяет регулировать подвод тепла к обрабатываемой системе в заданный момент времени и в необходимом количестве. Кривые извлечения сухих водорастворимых веществ полученные на аппаратах диаметром 0,15 м и 0,42 м близки между собой, при этом энергозатраты на проведение процесса сопоставимы и характеризуются близкими зависимостями. Это позволяет при переходе к аппаратам больших размеров необходимые энергозатраты принять пропорционально приведенным энергозатратам полученным на модельных аппаратах диаметром 0,15 м. В целом, полученные результаты показывают целесообразность использования вибрационных аппаратов диаметром до 0,42 м, оснащенных теплообменной рубашкой для переработки замороженного плодово-ягодного сырья. Корпус установки имеет двойные стенки между которыми заливается вода, нагреваемая трубчатыми электронагревателями. В корпусе установлена вибрационная тарелка диаметром 0,416м, толщиной 0,003м, перфорированная цилиндрическими отверстиями диаметром 0,003м, с долей свободного сечения 16,5%. По переферии тарелки в сторону дна установлена отбортовка высотой 16мм. Шток и тарелка приводятся в возвратно поступательное движение в вертикальной плоскости с заданными значениями амплитуды и частоты. Затраты мощности измерялись ваттметром типа 5016, с классом точности 0,2. Частота вращения электродвигателя измерялась тахометром SanpoMeter DT2236B с классом точности 0,05.Содержание сухих веществ в экстракте определяли рефрактометрическим методом. Амплитуда колебаний составляла 7мм, частота колебаний 8,3…13,9 Гц; соотношение фаз твердого (Т) и жидкого (Ж) j = 0,2…0,4. Расстояние от дна до тарелки 47±2 мм. Наличие рубашки позволяет регулировать подвод тепла к обрабатываемой системе. Кривые извлечения сухих водорастворимых веществ из плодов рябины красной и черноплодной полученные на аппаратах диаметром 0,15 и 0,42 м близки между собой, при этом энергозатраты на проведение процесса идентичны и характеризуются практически одинаковыми зависимостями. Это позволяет при переходе к аппаратам больших размеров энергозатраты принять пропорционально удельным энергозатратам полученным на модельных аппаратах диаметром 0,15м.
Besides the targeted viscosity decrease, the high-temperature autoclaving of cellulose nitrates (CNs) can provide one of the key properties – chemical stability – which governs the operational process safety and guaranteed shelf life of CN-based products. Here we report the study results of the autoclaving of cellulose nitrates derived by esterification of pulp with mixed sulfuric-nitric acids. The pulp was obtained from an easily renewable domestic feedstock – oat hulls – agro-industrial residue. On the basis of experiments, regression relationships are suggested herein that enable the prediction of basic properties of CNs, depending on autoclaving time. The optimum high-temperature autoclaving time was identified that allows oat-hull CNs to be produced with the following characteristics: 12.14% nitrogen content, 12 mPa·s viscosity and 98% solubility in alcohol-ether mixture, which are similar to the characteristics of dinitrocellulose (Colloxyline-N). Ampule chromatography confirmed that the resultant CNs had a high chemical stability. The quantity of nitrogen oxide from thermal decomposition of CNs (90 °С, 192 h) was found to be 0.35 ml/g and was not above the permissible level for dinitrocellulose. Differential scanning calorimetry revealed that the oat-hull CNs are characterized by a high onset temperature of decomposition (200 °С) and a high specific heat of decomposition (7.36 kJ/kg), indicating a high chemical purity of the resultant product. The findings presented herein justify the use of oat-hull CNs in the manufacture of gun-propellant grains and composite explosives.
In conditions of high employment, the question of proper and balanced nutrition is becoming more and more acute, since it is not always possible to get all the substances necessary for the body with food. In this regard, the development of functional instantiated products is an urgent task. The paper investigates the new design of a drum vibrating unit, namely, determining the strength of the obtained granules depending on the design and operating parameters of the process. The object of research was instantiated jelly in the form of granules with dimensions of 1–3 mm. Another task was to determine the effect of mechanical activation of potato starch on the strength of the resulting granules. From the analysis of the obtained data, it can be concluded that the greatest influence on the strength of the granules is exerted by the dynamic component, namely, the frequency and amplitude of vibrations, and the rotation frequency of the kneading unit does not have a significant impact, but directly affects the time when the product is in the drum unit. Analysis of the effects of mechanical activation of potato starch showed that granules obtained based on native potato starch have less static crushing strength. This is because during the mechanical activation of starch agglomeration centres are formed, which ultimately leads to an increase in strength.
