Resumo O entrave na comercialização de muitos frutos é justamente a alta perecibilidade que ocasionam perdas econômicas e nutricionais. A busca por estudos que explorem o potencial mercadológico de frutas agregando valor econômico é extremamente importante. Dentre as frutas com alta perecibilidade e que são pouco exploradas destaca-se o kiwi (Actinidia deliciosa A. Chevalier cultivar 'Hayward'). Ante o exposto, objetivou-se no estudo, elaborar e avaliar a qualidade físicoquímica de licores à base de kiwi. Foram elaborados quatro formulações com diferentes concentrações de cachaça onde foram avaliados quanto aos seguintes parâmetros: pH, acidez total em ácido cítrico, vitamina C, relação SST/AT, açúcares (redutores, não-redutores e totais), e teor alcoólico. A bebida elaborada apresentou teor alcoólico que variou de 12 a 26ºGL. Apresentaram valores de pH que variaram entre 3,62 no licor 4 e 3,70 no licor 1; já na acidez foi evidenciado valores que variaram de 0,17% no licor 4 a 0,22 % nos licores 1, 2 e 3; comprovando assim uma bebida relativamente ácida. No entanto, a presente pesquisa demostrou que, o processo utilizado para elaboração das bebidas foi promissor, e os frutos de kiwi sem dúvidas tem uma grande capacidade de industrialização para elaboração de novos produtos, em especial aos licores.
