O presente trabalho teve como objetivo a avaliação da estabilidade da caseína no leite bovino comercializado no município de Castanhal-PA. Os locais foram codificados como: Tratamento A, B e C, sendo coletadas 12 amostras em cada local durante três dias consecutivos (blocos), através de um delineamento em parcelas subdivididas. Foram realizadas análises de composição, células somáticas e análise de variância (ANOVA). Os resultados obtidos foram: células somáticas 75% das amostras encontraram-se dentro dos padrões exigidos pela legislação brasileira. Com relação à composição, os teores de gordura indicaram que 97,22% das amostras estavam dentro dos padrões; para as proteínas 97,22%; lactose 100%; ESD 100%; EST 97,22% das amostras dentro dos padrões exigidos pela legislação brasileira e caseína que apresentou apenas 2,7% de suas amostras. Pela análise de variância verificou-se que somente a variável animal e a interação local x animal, apresentaram diferença estatisticamente significativa a nível de 5% de probabilidade apresentando valores de f calculado maiores que o f tabelado (0,05).
Microbiological safety of fish is a concern of consumers, industries and regulatory agencies worldwide. Among the pathogenic microorganisms, Salmonella spp. is one of the main agents of foodborne diseases and should be absent in animal products. Rapid and accurate identification of pathogens in the supply chain is important for both quality assurance and tracking infectious agents within the chain. In this context, this study aimed to evaluate the equivalence of two rapid detection tests, as alternative methods to the conventional Salmonella detection method, as well as to verify the microbiological quality parameters of two commercially important fish species in the Amazon biome. The plate count of aerobic bacteria ranged from 7.76 x 10 4 to 8.71 x 10 7 CFU.g-1 for mesophiles and 1.70 x 10 6 to 4.27 x 10 8 CFU.g-1 for psychrotrophic whereas the maximum for this group of microorganisms in fresh fish is 10 6 CFU.g-1. Regarding the Staphylococcus count, the two species presented variations between 1.35 x 10 4 to 1.51 x 10 5 CFU.g-1. This represents unsatisfactory conditions of handling, storage and conservation of fish species. The immunoenzymatic and molecular methods have been shown to be reliable, fast and effective in the detection of Salmonella and for its high index of agreement with the conventional detection method. We also emphasize the convenience of multiplex PCR application due to the high sensitivity, specificity, speed and accuracy of Salmonella detection.
O vigente estudo apresenta como principal objetivo avaliar a qualidade higiênico-sanitário e a composição nutricional do leite in natura produzido no laboratório de leite do Instituto Federal do Pará -Campus Castanhal. O leite in natura foi coletado no setor de bovinocultura do IFPA-Campus Castanhal, respeitando o horário de ordenha pela qual os animais diariamente são ordenhados e as boas práticas de fabricação de alimentos (BPF). As coletas seguiram um cronograma, onde eram avaliados de quinze em quinze dias os respectivos parâmetros físico-químicos: gordura (%), sólidos não gordurosos (%), densidade (kg/m3), ponto de congelamento (ºC), condutividade (ms/cm), proteína (%), lactose (%), sólidos (%), água adicionada (%) e temperatura (ºC), pH e ATT (%). Por fim, as amostras foram coletadas a cada 30 dias, sendo submetidas a análises de Coliformes Totais, Coliformes Termotolerantes e Contagem de microrganismos Aeróbios, visando determinar a sua qualidade microbiológica.
