The application of caramel has existed since millenary times, originating in China with rudimentary blown figures. However, up to the present time, the complex artistic figures that are presented in the competitive world gastronomic scenarios or as part of gastronomic sophistication are served in the most exclusive A&B establishments. For this study, a thorough qualitative bibliographic review has been carried out to support and substantiate the culinary chemical principles of components, reactions and process of elaboration of caramel. Concluding in the first instance that sugars are susceptible to reactions such as caramelization due to high temperatures, which leads to the melting point of the carbohydrate to melting and generates compounds related to the characteristics of smell, taste but especially, the dark color of this food; chemical products such as furfural, melanoidin’s, furans, furanone, lactones, pyrones, aldehydes, ketones and more that give the identifying characteristic to the final sweet product.
Esta investigación utilizó el aceite esencial (AE) de la planta Tipo (Minthostachys mollis) para conservar carne de hamburguesas. La extracción del (AE) se realizó por destilación por arrastre de vapor; como resultado de este proceso se obtuvo hidrolato y el aceite esencial, El (AE) fue incorporado a la hamburguesa en diversos porcentajes en su elaboración. Para determinar las características organolépticas que aporta el (AE) en las hamburguesas, se elaboraron fichas de análisis sensorial, éstas fueron aplicadas al grupo focal de 31 docentes de la Escuela de Gastronomía. Las hamburguesas con diferentes porcentajes de (AE) fueron sometidas a exámenes microbiológicos para determinar la presencia (UFC) de Escherichia coli, Salmonella y Staphylococcus aureus, observando que para E. coli y S. aureus hubo un crecimiento mayor en la muestra T0 (0% de AE) frente a las tres muestras que tienen aceite esencial; y a medida que se añade aceite esencial el crecimiento disminuye, a diferencia de Salmonella en donde no hay presencia de (UFC) en ninguna muestra. En características organolépticas se evidenció que el (AE) no modifica los parámetros color, olor y textura, sin embargo en el descriptor sabor existieron diferencias estadísticas siendo mejor aceptada la muestra T0 (0% de AE) frente al resto de tratamientos que si tenían aceite adicionado como conservante.
