This study adopted widely targeted high-performance liquid chromatography-tandem mass spectrometry (HPLC-MS/MS) metabolomics and multivariate data analysis methods to evaluate the correlation between changes in metabolites and their taste formation in dry-cured beef during processing. The physicochemical profile changed significantly in the maturity period (RG), especially due to the continuous hydrolysis and oxidation of proteins. The sensory characteristic of dry-cured beef was highest in saltiness, umami, overall taste, and after-taste in RG. Overall, 400 metabolites were mainly identified, including amino acids, peptides, organic acids, and their derivatives, nucleotides, and their metabolites, as well as carbohydrates. Cysteine and succinic acid were significantly up-regulated during the process of dry-curing beef compared to the control group (CG). Moreover, glutamine and glutathione were significantly down-regulated in the fermentation period (FG) and in RG. Kyoto Encyclopedia of Genes and Genomes (KEGG) enrichment analysis revealed that glyoxylate and dicarboxylate metabolism, glutathione metabolism, alanine, aspartate, and glutamate metabolism, arginine biosynthesis, taurine, and hypotaurine metabolism were the main metabolic pathways influencing the taste of dry-cured beef during processing. Results of correlation analysis revealed that umami is positively correlated with salty, L-cysteine, L-arginine, inosine, creatinine, and succinic acid. Our study results provide a better understanding of the changes in taste substances and will contribute to quality evaluation of dry-cured beef.
Using biomechanical test system to reveal the kinematics parameters of instep shot in different heights in soccer players. Twelve healthy male college students voluntarily participated in this study. After digitizing the recording collected by camera, this study reached the following conclusion that (1) In instep front shot the lower the contact height with ball during kicking, the faster the ball velocity. Therefore, the author put forward a proposal that in order to obtain the faster ball velocity, the kicking ball point should be lower, and (2) the player can control the ball velocity, ball trajectory, and the time of technique by controlling the vertical distance between support leg and ball.

Using kinetics measurement method with CON-TREX biomechanical test system to reveal the peak torque of flexors and extensors in knee joint under different velocities in soccer players. Thirteen male college students participated in this study,. After analyzing the data collected by kinetics measurement device , this study reached the following conclusion that (a) there is no significant difference in different velocities on absolute peak torque and relative peak torque in knee joint of soccer players,(b) the knee joint extensor and flexor muscles in different velocities in soccer players should be developed with balance.
In order to adapt to the tremendous changes brought about by the information age and the increasingly fierce competition environment, manufacturing enterprises need to continuously carry out business model innovation in the development to ensure the continuity and stability of the operation. Based on the relationship between value network and business model innovation, this paper proposes that manufacturing enterprises can realize business model innovation by constructing a customer-centered and enterprise-centered value network. The research finds that value network helps manufacturing enterprises achieve service goals. Through innovations in value proposition, value creation, value maintenance and value realization, manufacturing enterprises can build a new value network and realize their business model innovation.
