Монастырская, 82 Развитие технологий и промышленного производства приводит к возрастанию объемов и спектра выбросов химических веществ в ок-ружающую среду. Как следствие, продукты питания могут содержать повышенные концен-трации токсических веществ, в том числе тяже-лых металлов, которые попадают, например, в овощи и фрукты через загрязненную почву, атмосферный воздух, воду, используемую при орошении. Кроме того, производители исполь-зуют новые добавки, повышающие вкусовые качества, увеличивающие сроки хранения про-дуктов питания, однако влияние этих добавок на здоровье остается малоизученным.
