Рассмотрены технологические особенности применения сливочного масла при изготовлении дрожжевых слоеных изделий в зависимости от сезона выработки молока. Актуальность выбранной темы обусловлена тенденциями перехода пекарен от использования маргарина к применению масла в кондитерских и хлебобулочных изделиях. Данный переход связан с повышением потребительского спроса на продукты питания, в процессе изготовления которых не применяются гидрогенизированные жиры, ароматизаторы, красители и прочие пищевые добавки. В качестве объекта исследования было выбрано новозеландское сливочное масло, которое позиционируется на рынке, как «grass fed». Данный термин означает, что масло изготовлено из молока коров, находящихся большую часть времени на вольном выпасе и питающихся свежей травой. Исследовано, что новозеландское масло обладает рядом преимуществ: высоким содержанием натурального β-каротина, витаминов D, К2, Е, чистым сливочным вкусом и ароматом. В работе авторами были исследованы технологические свойства продукта на примере изготовления дрожжевых слоеных изделий. В ходе исследования была изучена зависимость технологических свойств новозеландского сливочного масла, изготовленного в период с августа по январь, от профиля жирных кислот, термоустойчивости, содержания твердых жиров, содержания β-каротина; их влияние на органолептические показатели готовых дрожжевых слоеных изделий. Установлено, что сливочное масло, изготовленное в период с августа по октябрь, более пластичное и мягкое, данное масло требует снижения рабочей температуры на 2-4 °С в отличие от масла сезона ноябрь-январь. Сформулированы рекомендации по технологическим режимам изготовления дрожжевых слоеных изделий.Ключевые слова: сливочное масло, новозеландское масло, «Grass Fed», дрожжевые слоеные изделия, технологические свойства сливочного масла, термоустойчивость.
