Objetivou-se analisar a qualidade do leite in natura produzido e comercializado no município de Timon no Maranhão. O trabalho foi realizado entre os dias 16 a 29 de novembro de 2010. Foram coletadas aleatoriamente 15 amostras de leite in natura em propriedades onde a venda do produto era realizada sem qualquer inspeção por partes das autoridades sanitárias. Cada uma das amostras continha 500mL de leite e as mesmas foram conduzidas ao laboratório para a realização de análises microbiológicas e físico-químicas. Os resultados encontrados neste estudo foram comparados com os valores da Instrução Normativa nº 51. Foi que em 13,33% das amostras continha bactérias mesófilas acima do permitido pela legislação. Na avaliação do índice de matéria gorda em 53,3% das amostras o mesmo estava dentro do permitido. 86,6% das amostras de leite para acidez encontrava-se dentro das normas. Os demais parâmetros analisados, como o extrato seco desengordurado (26,67%); a densidade (80%); a crioscopia (73,33%) e o extrato seco total (100%) foram considerados normais de acordo com os índices da Instrução Normativa nº 51. O leite bovino in natura produzido e comercializado no município de Timon -MA apresentou-se inadequado ao consumo humano no período pesquisado em 13,33% do total de amostras analisadas.Palavras-chave: Físico-química.
