Los aceites esenciales (AE) son usados como conservantes en la industria de alimentos, debido a sus características fisicoquímicas y actividad antioxidante. El objetivo de esta investigación fue determinar rendimiento (R), gravedad específica (GE), índice de refracción (IR), actividad antioxidante (AA) y composición química de AE de huacatay (Tagetes minuta), poleo (Minthostachys mollis), romero (Rosmarinus officinalis L.) y sachaculantro (Eryngium foetidum L.), plantas recolectadas de 52 distritos de la región Amazonas, Perú. Para cada AE se usó análisis de varianza de efectos fijos con tres repeticiones y análisis de clúster. La actividad antioxidante se determinó con el método del radical libre 2,2-difenil-1-picrilhidracilo (DPPH) y sus componentes más abundantes fueron identificados con cromatografía de gases acoplada a espectrometría de masas. Las diferencias en R, GE e IR fueron significativas entre distritos. La AA no mostró diferencia significativa entre los distritos, pero entre las plantas sí. Entre los componentes volátiles más abundantes se identificó 1-adamantanol (44,42%) en huacatay, β-felandreno (20,85%) en poleo, β-mirceno (34,59%) en romero y α-pineno (23,41%) en sachaculantro. Se concluye que el lugar geográfico afecta significativamente las propiedades fisicoquímicas de los AE.
Se analizó la presencia de la ocratoxina A (OTA), una micotoxina con propiedades carcinogénicas, en el cacao blanco de Piura. Las muestras fueron colectadas en cuatro etapas de la producción de granos: cosecha, fermentado, secado y almacenado. El análisis se hizo tanto en la cáscara del grano como en el cotiledón. Las muestras fueron colectadas del centro de acopio de la Asociación de Pequeños Productores de Cacao de Piura (APPROCAP). La OTA se extrajo de las muestras utilizando bicarbonato de sodio 1%, se purificó mediante columnas de inmunoafinidad y su posterior cuantificación por cromatografía líquida de alto rendimiento (CLAR). En la etapa del fermentado se encontró una concentración detectable de OTA (1,92 ± 0,02 µg/kg). Las etapas de cosecha, secado y almacenado en el proceso de producción de los granos de cacao no manifestaron presencia de OTA.
De las hojas y mices de la especie Grateoloupia Doryphora fueron extraídas separadamente el manitol cristalino y dos ácidos oliguronicos, ambas extracciones se hicieron en etanol. Los "fucans" estuvieron presentes en todas las extraciones secuenciales acuosas acídicos y básicas. Cada tipo de "fucan" contenía proporciones variantes de fucosa (mayor porcentaje), galactosa, mañosa, xilosa,acido glucuronico, sulfatos y pequeñas proporciones de proteinas.Los alginatos se extrajeron directamente en medio alcalino, la diferencia de las extracciones secuenciales en ambas partes de la planta fue la mayor cantidad de ácido gulurónico presente en el acido algínico extraído en las raíces de la planta.
Se analizó la presencia de ocratoxina A (OTA), una micotoxina con propiedades carcinogénicas, en los granos de Theobroma cacao L. “cacao trinitario” procedente del centro de acopio de Pisana-Tingo María, de la Región San Martín, Perú. Las muestras fueron colectadas en cuatro etapas de producción: cosecha, fermentado, secado y almacenado. La OTA se extrajo utilizando acetonitrilo al 60 % y purificándose mediante columnas de inmunoafinidad y posterior cuantificación por cromatografía líquida de alto rendimiento (HPLC). El porcentaje de recuperación del método utilizado se evaluó mediante el uso de muestras fortificadas con OTA evidenciando un porcentaje de recuperación mayor al 95 %. Los granos evaluados en las diferentes etapas de producción no manifestaron presencia de ocratoxina A y en el análisis micotoxigénico se evidenció la presencia de hongos del género Fusarium, Penicillium y levaduras.
