Cow milk is under increased scrutiny due to its environmental impact and ethical considerations concerning animal welfare. At the same time, a rising share of consumers is switching to plant-based milk substitutes (abbreviated “plant milk”). The objective of this study was (1) to analyze the product image of plant milk and cow milk and (2) to compare the motivational structure behind the consumption of both product categories. For this purpose, a quantitative survey with Austrian consumers was carried out to analyze the product image of plant milk in comparison to cow milk (n = 1001). The product image analysis revealed that the product image of cow milk is still much better than that of plant milk. Amongst others, cow milk is considered to be healthier, more natural, and better for bones. Product image valuation was dependent on the (non-)consumption of plant milk. Plant milk consumers evaluated plant milk significantly better; they considered plant milk to be much better digestible and allergy-free. The qualitative study using means-end-chain analysis, with two sub-samples of interviewees (plant milk consumers, n = 30, and cow milk consumers, n = 30), identified different motives for the consumption of cow milk and plant milk. Motives that were only reported from cow milk consumers are the origin of milk and the support of small-scale dairy production of farmers. Motives of plant milk consumers were much more diverse and included animal welfare and sustainability aspects.

In recent years, discount grocery retailers have expanded their global reach and added to their traditional no-frills offerings to also cater to hedonic consumer needs. In addition to a larger product assortment and a more pleasant shopping experience, they now sell organic food, which commands a price premium compared to non-organic alternatives. To understand organic food in a discount setting, this study sets out to examine the factors that influence discount grocery shoppers’ purchase intention for organic food. To study this relationship, this paper tests several factors in a structural equation model, finding a positive relationship between hedonic shopping values, environmental concern, as well as health consciousness and the purchase intention for organic food. In our model, based on a US consumer survey (n = 394), price consciousness exhibited a direct and negative relationship with the purchase intention for organic food. Furthermore, this study found that that the impact of environmental concern, health consciousness, and hedonic shopping value is greater on the purchase intention of organic food than that of price consciousness, even in this discount setting. This study concludes by discussing these results and attempting to outline potential areas for future research, as well as managerial implications.

Integrated Water Resources Management (IWRM) is a relatively new approach in Bolivia. However, it is now generally accepted that this approach needs to be established in order to find sustainable solutions for development and is actively promoted by the Water Ministry, especially in environmentally fragile regions, such as the Lake Poopo basin. The Lake Poopo basin is one of the poorest regions in the Bolivian Altiplano. It is confronted with severe water scarcity during the dry season, leading to low water quality, a high water-poverty index and low values of the watershed sustainability index. Furthermore, salinization and environmental degradation of soil and water are forcing people to migrate to urban areas. These are some of the factors underlying an ever-increasing complexity in integrated water resources management in the region. This paper proposes and develops a Multi-criteria Decision Analysis (MCDA) in the Lake Poopo basin, based on economic, social and environmental criteria in an uncertain decision environment in order to support stakeholders in managing their water resources. Saaty's analytical hierarchy process (AHP) theory is applied here to solve the MCDA and to identify the alternatives using the highest expected utility value. The paper identifies the best solutions for existing conflicts, while promoting interaction with stakeholders and instruments in order to reach a sustainable strategy for water resources management in this water-scarce region.A. As the COVID-19 pandemic brings about sudden change in societies across the globe and likely heralds the start of a recession, we examine the pandemic’s impact on consumer food safety perceptions. Due to its origin, COVID-19, likely spurring from an animal-to-human transmission in the context of a wet market, may impact consumer food perceptions in similar ways to the avian flu (H5N1) and the swine flu (H1N1). We examine this effect by studying preferences for beef meat in a consumer survey in the United States (n = 999) using a choice-based experiment. We compare our findings to Lim et al. (2014), who elicited consumer beef willingness to pay (WTP). Additionally, we investigate the impact of the looming recession by analyzing several attributes and their effect on consumer preferences. Our findings suggest that food safety concerns have become more important. As a result, production standards and the country of origin have lost importance. Additionally, we show that the socioeconomic impact for some respondents impacts their shopping preferences. Finally, we outline potential areas for future research as well as managerial implications.
