The analysis of the literature allows us to characterise the potential of the new probiotic yeast strain S. boulardii. The paper describes the long period of formation of fundamental knowledge and introduction of some technological methods into the production of different fermented milks products. Besides the historical aspect, the microbiological diversity of fermented milks products is considered, and the technological differences in manufacturing them are shown. It is known that yoghurt is one of the most famous fermented milk products. This dairy product has been very popular for years due to its taste characteristics and ease of manufacture. With the accumulation of knowledge about probiotics and the yoghurt production technology, there has appeared a tendency to further enrichment of the product with certain probiotics, prebiotics, and minerals. Today, yoghurt manufacturing actively uses the method of enriching the finished product with probiotics. This allows creating a qualitatively new functional food product that not only has nutritional value for the consumer, but also produces a certain positive effect on intestinal microbes and thus on the consumer’s health. Bacteria are known to be the main probiotics, but the recent discovery of the probiotic properties of certain genera and species of yeast opens up new prospects of their use, both in the pharmaceutical industry and in creating functional foods. The recently discovered yeast strain S. boulardii, phylogenetically related to S. cerevisiae, has many therapeutic effects and significant advantages over bacterial probiotics, in particular, it is resistant to antibiotics. S. boulardii is a probiotic strain that can be used to enrich yoghurt. The physiological properties of the strain and therapeutic properties of the products of its metabolism along with the technological parameters of yoghurt processing make a combination of the probiotic and this beneficial fermented milk very promising. It has been determined that to produce enriched yoghurt, it is possible to use both a lyophilised culture of S. boulardii and a microencapsulated one. On analysing the economic aspect, especially the sale of yoghurts and the further tendency towards an increase in its consumption, we can say that the introduction of S. boulardii as an enrichment strain is a promising issue of current importance.
Results of studies of dry milk based mixtures for extremal nutrition, obtained by spray drying at various temperatures are presented. Viable cells number, sensorial, physical and chemical parameters are determined. The increase of dry whey protein concentrate (WPC) content from 1% to 6% leads to an increase in the protein content in the product from 25% to 37%. At the same time, the relative rate of dissolution increases by 2.7 times, and the active acidity decreases by 0.16 pH units. It is established that the drying temperature of the mixtures is 130 ± 2 °C at the inlet of the drying tower and 60 ± 2 °C at the outlet, can be is recommended for maximum preservation of the viability of probiotic microorganisms. Streptococcus thermophilus strain turned out to be the most resistant to elevated drying temperatures in comparison with other strains. It is noted that the introduction of WPC effected the survival of probiotic bacteria to survival during drying and storage positively. The smallest losses of viable microorganisms after drying the product were found in test samples with strains of Streptococcus thermophilus and Enterococcus faecium and addition of WPC to the product formulation, while the number of viable cells decreased by 1.7 times and 2.1 times, respectively. It was shown that during 18 months of storage, a high rate of viable cells was for the Enterococcus faecium strain and the addition of WPC and barley malt extract (BME) to the samples, where the losses were 11.8% and 11.9%.
Предмет дослідження. Розроблення технологій ферментованих молочних продуктів зі зниженим вмістом лактози на основі вторинної молочної сировини. Мета. Провести дослідження щодо відбору штамів молочнокислих та біфідобактерій з β галактозидазною активністю, створити композиції на їх основі, розробити технологічний регламент заквашувальних препаратів та перевірити їх ефективність на модельних молочних сумішах на основі маслянки та знежиреного молока. Результати. Здійснено скринінг штамів різних таксономічних груп за ознаками, цінними для виробництва низьколактозних ферментованих молочних продуктів, а саме за галактозидазною активністю та здатністю утилізуватилактозу. Виявлено, що найбільша β галактозидазна активність була притаманна штамам S. thermophilus, найменшою β галактозидазною активністю володіли штами B. longum, B. adolescentis. Найбільший рівень утилізації лактози було зафіксовано у штамів S. thermophilus, тоді як найменшу інтенсивність ферментації вуглеводу встановлено для B. longum. На основі створених різних за складом композицій штамів мікроорганізмів, що відрізняються високою здатністю до синтезу ферменту β галактозидази, розроблено два заквашувальні препарати: бакпрепарат 1 (Bifidobacterium bifidum, B. longum, B. adolescentis, Streptococcus thermophilus) та бакпрепарат 2 (B. bifidum, B. longum, Streptococcus thermophilus, Acetobacter aceti). Ефективність бактеріальних препаратів перевірено на модельних молочних сумішах. Встановлено, що після заквашування модельних сумішей в різних співввідношеннях молока знежиреного та маслянки, заквашувальний препарат 1 має вищу β галактозидазну активність, оскільки вміст лактози у дослідних зразках зменшився на 26,7 29,0% від початкового, порівняно з препаратом 2, де згаданий показник знизився на 25,6 27,6%. Відмічено, що рівень утилізації лактози вищий у сумішах зі співвідношенням молоко знежирене: маслянка 1,0:1,0 та 0,5:1,5, тобто у маслянці та у сумішах з більшим вмістом маслянки, заквашувальні препарати проявляють вищу βгалактозидазну активність. Сфера застосування результатів. Розробка сприятиме насамперед збільшенню на ринку частки заквашувальних препаратів вітчизняного виробництва, які володіють підвищеною β галактозидазною активністю, що призведе до підвищення конкурентоспроможності молочних продуктів зі зниженим вмістом лактози для харчування людей з лактазною недостаністю.
