Lipid oxidation is certainly one of the most important alterations that affect both oils or fats and foods that contain them. It is responsible for the development of unpleasant taste and smell in foods, making them unsuitable for consuming. The use of antioxidants permits a longer useful life of these products. This work presents a bibliographic review of research carried out in order to evaluate the antioxidant activity of natural or synthetic substances used in the conservation of food lipid. Among such substances, the following antioxidants are highlighted: butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), tertiary butylhydroquinone (TBHQ), propyl gallate (PG), tocopherols, phenolic acids and isolated compounds from rosemary and oregano.Keywords: lipid oxidation; natural antioxidants; synthetic antioxidants. INTRODUÇÃOCom a finalidade de inibir ou retardar a oxidação lipídica de óleos, gorduras e alimentos gordurosos, são empregados compostos químicos conhecidos como antioxidantes.Os lipídios são constituídos por uma mistura de tri, di e monoacilgliceróis, ácidos graxos livres, glicolipídios, fosfolipídios, esteróis e outras substâncias. A maior parte destes constituintes é oxidável em diferentes graus 1 , sendo que os ácidos graxos insaturados são as estruturas mais susceptíveis ao processo oxidativo 2 . A oxidação lipídica é responsável pelo desenvolvimento de sabores e odores desagradáveis tornando os alimentos impróprios para consumo, além de também provocar outras alterações que irão afetar não só a qualidade nutricional, devido à degradação de vitaminas lipossolúveis e de ácidos graxos essenciais, mas também a integridade e segurança dos alimentos, através da formação de compostos poliméricos potencialmente tóxicos 3-5 . Os lipídios podem ser oxidados por diferentes caminhos: Reações hidrolíticas As reações hidrolíticas são catalisadas pelas enzimas lipase ou pela ação de calor e umidade, com formação de ácidos graxos livres 6 . Oxidação enzimáticaA oxidação por via enzimática ocorre pela ação das enzimas lipoxigenases que atuam sobre os ácidos graxos poliinsaturados, catalisando a adição de oxigênio à cadeia hidrocarbonada poliinsaturada. This study aimed to characterize the pulp and kernel of guariroba (Syagrus oleracea), jerivá (Syagrus romanzoffiana) and macaúba (Acrocomia aculeata) palm fruits, through their proximate composition, carotenoids contents and tocopherol composition. The three kernels showed to be composed mainly of lipids and proteins, as the three pulps, of carbohydrate and fiber. In the kernels the levels of lipids ranged from 45.17 to 56.37% and proteins from 15.46 to 28.61%. In the pulps the total fiber content ranged from 20.26 to 26.98%. The pulps also presented a significant amount of ash, which represents a significant mineral content, especially in the guariroba (5.16%). Moreover, the pulp oils showed higher carotenoids and tocopherol contents. The jerivá pulp oil contained carotenoid and tocopherol on average 1219 μg/g and 323.50 mg/kg, respectively. The consumption of the whole fruit, pulp, and kernel supplies important quantities of many necessary nutrients for human diet, including vitamins A and E.
The pulps contained more unsaturated fatty acids than the kernels, mainly oleic and linoleic. Moreover, the pulps showed higher carotenoid and tocopherol contents. The kernels showed a predominance of saturated fatty acids, especially lauric acid. The fatty acid profiles of the kernels suggest that these oils may be better suited for the cosmetic and pharmaceutical industries than for use in foods.
Citrus seeds represent substantial wastes of citrus-processing. Oils extracted from orange (Citrus sinensis), lemon (Citrus limon) and tangerine (Citrus reticulata) seeds were investigated. The seeds were removed from the fruits, washed, dried at room temperature, ground and the oils extracted using a Soxhlet extractor. The seed oils were analyzed in terms of the lipid content, fatty acid, tocopherol and carotenoid compositions, total phenolic content, oxidative stability and the radical-scavenging activity. The oil content of citrus seeds ranged from 34.92 to 41.66%. The oils showed high degrees of unsaturation and essential fatty acids. Oils exhibited also natural antioxidants specially tocopherols and phenolic compounds. The Rutaceae comprises about 150 genera and 1,500 species including some of the most cultivated and consumed fruits of the world, such as C. sinensis (orange), C. reticulata (tangerine), C. paradisi (grapefruit), C. limon (lemon) and C. aurantifolia (lime). Great part of their production intends for juice making, which generates tons of waste, such as seeds that are often disposed, and thus increasing environmental pollution.Besides a large scale in natura consumption, vast quantities of citrus fruits are processed mainly to obtain juice, but also, in the canning industry, to produce marmalade, and by the chemical industry to extract flavonoids and essential oils. Wastes from industrial processing are composed of peels, seeds and pulps representing 45 to 58% of the raw processed fruit (El-Adawy et al., 1999).Several phytochemicals may be detected in edible seed oils including tocopherols, carotenoids, phenolic and polyphenolic compounds, and special fatty acids such as α-linolenic acid. In addition to the phytochemical components, other important oil properties include oil stability and antioxidant activity.Citrus seeds contain from 26 to 42% of oil and are a good source of K, Ca, Na, Fe and Mg (El-Adawy et al., 1999). RESUMOA finalidade deste estudo foi caracterizar os óleos extraídos das sementes de laranja, maracujá, tomate e goiaba, como aproveitamento de resíduos industriais. Os óleos foram extraídos das sementes em um extrator Soxhlet, utilizando como solvente o éter de petróleo e a caracterização dos mesmos foi realizada por meio de métodos analíticos padrões para óleos e gorduras (ácidos graxos livres, índices de peróxidos, refração, iodo, saponificação, matéria insaponificável e estabilidade oxidativa). As análises realizadas indicaram que esses óleos possuem características físico-químicas semelhantes a alguns óleos comestíveis, podendo ser uma nova fonte de óleos para o consumo humano. ABSTRACTThe purpose of this study was to characterize the extracted oils of the seeds of tomato, orange, passion fruit and guava with the objective of using industrial residues. The oils were extracted from the seeds with a Soxhlet extractor, using petroleum ether as solvent, and were characterized by standard methods for oil and fat analysis (free fatty acids, peroxide value, refractive index, iodine value, saponification value, unsaponifiable matter and oxidative stability). INTRODUÇÃOAs indústrias alimentícias brasileiras produzem resíduos que poderiam ter uma finalidade muito mais benéfica ao homem e ao meio ambiente. Muitos frutos comestíveis são processados para fabricação de sucos naturais, sucos concentrados, doces em conserva, polpas e extratos, os quais possuem sementes que são, muitas vezes, descartadas sendo que poderiam ser utilizadas para minimizar o desperdício de alimentos.O descarte dos resíduos do processamento das frutas tropicais e subtropicais representa um crescente problema devido ao aumento da produção. Como este material é geralmente propenso a degradação microbiológica, isto limita uma exploração futura. Por outro lado, o custo da secagem, armazenagem e transporte de subprodutos são fatores economicamente limitantes. Por isso, os resíduos industriais são muitas vezes utilizados como ração animal ou na forma de fertilizantes. Porém, a demanda por ração pode variar e depender da produção agrícola, além do problema do descarte desses subprodutos ser agravado pelas restrições legais.
