The object of research: technology for the production of waffles of increased consumer value with a fat filling using non-traditional plant raw materials. Investigated problem: the problem of the production of new waffles is solved by using a mixture of vegetable-butter and coconut oil, dry skim milk, carob powder, apple powder, cinnamon and ascorbic acid. Main scientific results: The use of non-traditional raw materials in the fatty filling of waffles increases the organoleptic properties of the products. Waffles have a pleasant taste and aroma due to the content of carob powder, apple powder and cinnamon in the filling. Due to the introduction of unconventional raw materials and herbal additives into the formulations of new products, the amount of total sugars was reduced. The mass fraction of fat also decreased due to the replacement of confectionery fat for waffle fillings with a vegetable-butter mixture and coconut oil. The moisture content of new samples of waffles and waffle sheets is within the established norms. It was found that the finished waffles meet the requirements of the state standard for physical and chemical indicators. The developed score helped to establish that the quality level of the developed waffles is 0.97. The area of practical use of the research results: food industry enterprises specializing in the production of confectionery. An innovative technological product: the technology for the production of waffles with a fat filling using non-traditional plant raw materials makes it possible to obtain a new confectionery product of increased consumer value with a balanced composition and high organoleptic properties. Within the framework of the signed Association Agreement with the EU, Ukraine has undertaken many obligations to harmonize its legislation with European norms, which gives our country the opportunity to import its products into the countries of the European Union almost without restrictions. One of these requirements is the prohibition of domestic manufacturers to use protected in Europe geographical indications of the origin of goods to indicate their products. The problems related to preparation for registration and protection of geographical indications of food, wines, flavored wine products, alcoholic beverages as intellectual property are considered. Nowadays Ukrainian producers are not too quick to change some names of domestic goods, which are borrowed by European geographical names and under the Association Agreement with the EU should not be used both in the foreign and domestic market.
There is a certain dissonance between the rate of increase in demand, for an expanded range of perfumery and cosmetic goods, and the slow development of regulatory and legal regulation of their production and safety. During the research, it was established that the inertia of state bodies regarding the approval of laws has a significant impact on the economic development of industry enterprises. Problems in methods for determining substances have been identified; ambiguity of the legislative framework regarding the legal liability of producers for falsification, use of non-regulated components, labeling requirements. To solve the problem, a critical analysis of the regulatory impact of the regulatory framework, in time, on the economic condition and competitiveness of industry products was carried out. The legislative requirements put forward in Ukraine, EU countries, Canada, America, China on control of production and testing of cosmetics on animals have been analyzed. As a result of the research, four stages of reforming regulatory regulation by the state and bringing the legislative framework of the industry in line with European requirements have been identified and substantiated. New categories introduced into the regulatory framework have been identified and the prospects for exporting goods produced within the framework of the new regulatory framework are shown. Based on the results of the research, identical and different requirements of the Ukrainian and European regulations for cosmetic products, for packaging, labeling, methods for studying stability, physical and chemical indicators, sampling procedure for expert evaluation were established. It is shown that the introduced changes meet the requirements of European standards and could increase the competitiveness and investment potential of domestic enterprises of the cosmetic industry
