На основе геоэкологического и экономического анализа в статье рассмотрены возможности увеличения качественных продовольственных ресурсов Чувашской Республики, связанные с производством, заготовкой и переработкой как культивируемых, так и дикорастущих грибов. Эти направления интересны не только исходя из имеющегося потенциала экономики республики и ее грибного ресурса, но и в соответствии с мерами государственной поддержки в данной сфере. С учетом наличия нескольких крупных птицеводческих комплексов и производителей различной растительной продукции, которые способны обеспечить дешевым субстратом и мицелием грибоводческие организации, представляется перспективным восстановление и расширение производства культивируемых грибов в Чувашской Республике. Другим перспективным направлением использования лесных и культивируемых грибов является их промышленная переработка (сушка, консервирование, заморозка и т.п.) и использование кулинарной продукции из грибов на предприятиях индустрии питания, что важно для социальноэкономического развития Чувашии в аспекте повышения экономической и туристической привлекательности республики. В основе местного кулинарного туризма лежит знакомство с блюдами чувашской кухни, и кулинарная продукция из грибов может составить ее значительную часть. По результатам исследования авторы обосновали необходимость внедрения производств, связанных с использованием потенциала дикорастущих грибов, и ускоренного наращивания производства культивируемых грибов. Данные мероприятия представляются перспективными и малозатратными коммерческими проектами для организаций Чувашской Республики, в том числе системы Чувашпотребсоюза, и в целом могут стать многообещающим направлением развития экономики республики.
