O mel é um produto alimentício, conhecido desde a Antiguidade devido às suas diversas ações benéficas para a saúde, mas, apesar de todo o crescimento da área que envolve o produto, controle de qualidade ainda não é uma prática que atinge todos os produtores e comerciantes que se encontram no mercado. O objetivo deste estudo foi avaliar a qualidade físico-química e microbiológica do mel comercializado na cidade de Maringá (PR), Brasil. Trata-se de um estudo experimental que envolveu dez amostras diferentes de mel obtidas em diversos estabelecimentos da cidade. Os seguintes parâmetros foram analisados: características organolépticas e gerais, análise microscópica, determinação da acidez titulável, reação de lugol, reação de fermentos diastásicos, reação de Lund, cinzas totais, umidade, pH, contagem de bactérias aeróbias mesófilas e termófilas, bolores e leveduras. Os resultados indicam que as amostras de mel comercializados em Maringá (PR) apresentam deficiências em sua produção e armazenamento. Quanto às características físico-químicas todas as amostras analisadas obtiveram valores em desacordo com o padrão. Do ponto de vista microbiológico, verificou-se que todas as amostras estão dentro dos padrões revisados, portanto, os resultados demonstram que há determinada falta de qualidade e segurança na utilização do mel comercializado.
