Recebido em: 22/10/2014 -Aprovado em: 30/11/2014 -Disponibilizado em: 15/12/2014 RESUMO: O estudo teve como objetivo verificar a aceitabilidade sensorial de iogurtes adicionados de micélio de cogumelo Agaricus brasiliensis e determinar a composição físico-química da formulação padrão e daquela contendo o maior teor de micélio de cogumelo com aceitação sensorial mais próxima a padrão. Cinco formulações de iogurte foram elaboradas, sendo uma padrão (F1), isenta de micélio de cogumelo, e as demais adicionadas com 5,0% (F2), 10,0% (F3), 15,0% (F4) e 20,0% (F5) do ingrediente. Participaram da análise sensorial 50 provadores não treinados, de ambos os gêneros, com idade entre 18 a 60 anos. Um nível de adição de até 5,0% de micélio de cogumelo foi melhor aceito pelos provadores para o atributo sabor, obtendo-se aceitação sensorial mais próxima ao produto padrão. Nos atributos aparência, aroma e aceitação global e intenção de compra as notas reduziram conforme se aumentou o teor do ingrediente (p<0,05). Foram verificados maiores teores de sólidos solúveis totais e calorias em F1 comparado com F2, sem diferença nos conteúdos de cinzas, proteínas, lipídios e carboidratos. Maiores teores de umidade foram encontrados em F2. A elaboração dos produtos permitiu comprovar que um nível de adição de até 5,0% de micélio de cogumelo em iogurtes foi bem aceito pelos provadores, obtendo-se aceitação sensorial mais próxima ao produto padrão e com boas expectativas de comercialização. ABSTRACT:The study aimed to determine the sensory acceptability of yogurt added mycelium of Agaricus brasiliensis and determine the physico-chemical composition of the standard formulation and that containing the highest content of mushroom mycelium with the nearest standard sensory acceptance. Five formulations of yogurt were prepared, standard (F1), free of mushroom mycelium, and the other with added 5.0% (F2), 10.0% (F3), 15.0% (F4) and 20.0% (F5) of the ingredient. Participated in the sensory analysis 50 untrained, of both genders, aged between 18-60 years. An addition level to 5.0% of the mushroom mycelium was better accepted by the panelists for flavor attribute to give the closest product to the standard sensory acceptability. The notes for attributes appearance, aroma and overall acceptance and purchase intent reduced as the increased content of ingredient (p<0.05). Higher levels of total soluble solids and calories in F1 compared to F2. There was no difference in ash, protein, lipids and carbohydrates content. Higher moisture contents were found in F2. The development of products that allow us to establish a level of addition of up to 5.0% of mushroom mycelium in yogurts was well accepted by the panelists, obtaining sensory acceptance closer to the standard product and good marketing expectations.
