Background and aimsA combined eel and soy-based tempe (CEST) flour is rich in nutrients, especially its high amino acid content in which bioactive peptides (BPs) are expected to be found. Hence, this research aimed to identify the BPs of CEST flour and CEST supplementation’s effect on improving nutritional status biomarkers by ameliorating serum protein, hemoglobin, and IGF-1 of malnourished rats.MethodsCEST flour with a ratio of eel and soy-based tempe of 1:3.5 was produced by applying the oven drying method. Amino acid sequences from six BPs were analyzed using a protein sequencer and spectrometer-electrospray ionization (MS-ESI). A total of thirty malnourished male Rattus norvegicus aged 3–4 weeks were given low-protein (LP; 4% w/w protein) diet treatment for 4 weeks. Afterward, rats were divided into 3 groups of 10 rats. Group A and B remained on a low-protein diet for 4 weeks, receiving an LP diet and getting doses of CEST of 100 and 200 mg/kg BW, respectively, via oral. Group C or control was given a Normal-protein (NP) diet (23% w/w of protein) and was allowed to feed ad libitum during the trial period without a dose of CEST.ResultsSix bioactive peptides were found, with WMGPY being the most abundant, along with a DPPH radical scavenging activity of 5.0 mg/mL. The results showed that serum protein, hemoglobin, and IGF-1 of group B were significantly higher compared to groups A and C (p = 0.0021). CEST dose of 200 mg/kg BW was more effective to increase serum levels of protein (p = 0.0052), hemoglobin, and IGF-1 (p < 0.0001) compared to a 100 mg/kg BW dose.ConclusionThis indicates that the CEST flour has six bioactive peptides, which may contribute to the improvement of nutritional status biomarkers. To establish its potential impact, a human clinical study is urgently needed.

Background: Anemia is a global public health problem, including Indonesia with 32% of adolescents are anemic. This study aims to process porang flour, moringa leaves, and tempe into cookies that are high in iron (Fe), folic acid, cobalamin (vitamin B12), and antioxidants as potential functional food snacks for adolescents with anemia. Methods: This study is experimental with a completely randomized trial design (CRD) with three treatments and replications. There are three comparison formulations of a combination of porang, moringa leaves, and black soybean-based tempe; respectively F1 (91:3:3:3)%, F2 (85:3:6:6)%, and F3 (77:3:10:10)%. The cookie sample was then analyzed for water content, ash, iron, folic acid, cobalt, and antioxidant activity. The differences between the samples were analyzed based on the activity of antioxidants, iron, folic acid, and vitamin B12 (cobalamin) in data obtained from triplicates using multivariate ANOVA analysis. Results: The results of the ash and water content tests of all three cookie formulations showed values in accordance with the Indonesian National Standard (SNI) for cookie products. F3 has significantly higher iron, folic acid, and cobalt levels than F1 and F2 (p<0.05). Antioxidant activity is highest in F3, but there is no statistical difference between F2 and F3 (p>0.05). Conclusions: The combination of porang's tubers, moringa leaves, and tempe made from black soybeans, especially F3, has the potential to be used as a functional cookie processed product source of iron (Fe), folic acid, cobalamin, and antioxidants for adolescent anemia.

Background: Citrulline is an ergogenic non-essential amino acid which is able to increase production, efficiency, and use of energy, as well as performance in sport. Purpose: The objective of this literature review was to explain the role of citrulline in improving exercise performance through both aerobic and anaerobic metabolic pathways. Discussion: The results showed evidence that citrulline has role in improving exercise performance. Several articles indicate that the consumption of citrulline either supplement or watermelon given during certain period or acute before the test might increase VO2max, retard muscle fatigue, and decrease delayed onset muscle soreness. Some studies used 6-8 g citrulline before exercise, but lower dose was used in some other studies. Conclusion: Amino acids citrulline either supplement or watermelon is believed to have role in improving exercise performance in athletes although there is no recommendation dose has been found. Background: Football players often experience muscle fatigue leading to impaired performance in the middle of the game. Watermelon contains citrulline which may detox ammonia and lactic acid in the urea cycle thus could help relieve muscle fatigue. Objectives: This study analyzed the effect of watermelon beverage ingestion on fatigue index (FI) in young-male, recreational football players. Methods: A randomized, 2-periods crossover design involving 26 young-male, recreational football players aged 15-17 years was performed. They consumed 500 mL of watermelon beverage in 1 of the 2 periods, and 500 mL of red sucrose syrup as placebo in the other for 7 days respectively. Running-based anaerobic sprint test (RAST) was conducted to measure FI, a day before and on the seventh day of the intervention. Results: Consuming 500 mL of watermelon beverage for 7 days decreased FI significantly (P = 0.001); however, placebo ingestion for 7 days had no significant effect in changing FI (P = 0.495). Conclusions: Watermelon beverage ingestion could relieve muscle fatigue in young-male, recreational football players. They are advised to consume 500 mL of watermelon beverage prior and until the end of the match session for 7 consecutive days to help relieving muscle fatigue and reaching the highest performance.
