IntroducciónLa importancia del aceite de oliva en el sector agroalimentario está fuera de toda duda, incluidos sus enormes beneficios para la salud. Siendo conscientes de la misma, las sociedades han realizado esfuerzos para obtener una mayor cantidad de aceite de forma mecánica y por ello, a lo largo de los siglos se han desarrollado numerosas invenciones y/o mejoras tecnológicas en torno a molinos y prensas de aceite de oliva.Así pues, desde los procedimientos primitivos de obtención de aceite de oliva hasta las modernas almazaras, la evolución tecnológica de este ejemplo de patrimonio histórico industrial ha sido notable y ha venido siendo estudiada con técnicas de ingeniería clásica fundamentalmente desde el punto de vista de la ingeniería mecánica, principalmente variables como presiones y esfuerzos.Asimismo, desde el punto de vista de la ingeniería gráfica han visto la luz numerosas publicaciones científicas relacionadas con la temática [1, 2, 3] que han desarrollado aspectos de documentación geométrica 3D del modelo así como recreaciones virtuales.Por otro lado, el estudio del patrimonio histórico industrial, como expresión del patrimonio cultural, es una disciplina que cada vez está cobrando mayor importancia, ya que los avances tecnológicos provocan que la tecnología quede desfasada en un corto período de tiempo.Por consiguiente, la importancia de la presente comunicación radica en el estudio tecnológico, fundamentalmente de la presión ejercida sobre la masa de aceituna molida, de una prensa de aceite de oliva que ha tenido una gran relevancia histórica. Así pues, para llevar a cabo esta investigación es necesario recurrir a herramientas propias de la ingeniería gráfica como el Diseño Asistido por Ordenador (CAD, del inglés Computer-Aided Design), pero también de la Ingeniería Asistida por Ordenador (CAE, del inglés Computer-Aided Engineering).Los resultados permitirán ofrecer una comparación entre las técnicas utilizadas desde la ingeniería clásica y las técnicas CAE
