This work aimed to evaluate the nutritional and rheological quality of ora-pro-nobis flour (OPNF) and its influence on the replacement of wheat flour (WF), through the analysis of physicochemical parameters, determination of phenolic compounds, antioxidant activity and rheological analyzes of wheat flour and mixtures with 10 to 30% OPNF. Flour blends with 10%, 20% and 30% of OPNF in substitution of WF in flour base were evaluated. The OPNF showed higher values of lipids (2.87%), proteins (18.29%), fibers (44.13%), ash (11.19%), minerals (Ca, Mg, K, Na, Fe and Zn), beta-carotene (71.37 µg 100 g-1), lycopene (25.02 µg 100 g-1), total chlorophyll (24.40 µg 100 g-1), ABTS radical-scavenging capacity (15.02 μmol Trolox eq. g-1) and DPPH (IC 50 = 33.30 μmol mL-1 extract) in relation to WF. The flour blends with 10%, 20% and 30% of OPNF showed a higher nutritional value and antioxidant activity proportional to the increase on OPNF concentration. The increasing on the concentration of OPNF in flour blends reduced the values of the gluten strength (P), tenacity (W), extensibility (L), water absorption and falling number. Moreover, it increased the values of dough development time, dough stability and water absorption. The results of rheological analyzes indicate that flour blends of OPNF (10%, 20% and 30%) with WF have characteristics suitable for use in biscuits, baked cakes and breads. The data from this study demonstrate the nutritional value and technological potential of OPNF for the development of food products.
As doenças transmitidas por alimentos (DTA) são responsáveis por enfermidades e morte em todo o mundo. Dentre os principais micro-organismos patogênicos envolvidos, destaca-se a Salmonella Enteretidis e Listeria monocytogenes. Os compostos naturais como óleo, extratos de plantas e peptídeos de origem microbiana podem apresentar atividade antimicrobiana contra bactérias, fungos e vírus. Neste sentido, o objetivo deste estudo foi avaliar a atividade antimicrobiana bem como a concentração inibitória mínima (CIM) do óleo essencial de gengibre (OG) e do peptídeo produzido pelo Lactococcus lactis (PP) contra S. Enteretidis e L. m onocytogenes. Para isto, utilizou-se o método de difusão em disco para avaliar a atividade antimicrobiana bem como a concentração inibitória mínima (CIM) do OG e PP contra S. Enteretidis e L. monocytogenes. Os tamanhos dos halos de inibição (mm) foram submetidos a análise de variância (ANOVA) e teste de Tukey, com nível de 95% de confiabilidade. O OG apresentou atividade antimicrobiana contra S. Enteretidis e L. monocytogenes, produzindo halos de inibição de 8,75 e 18,62 mm, respectivamente. O PP apresentou atividade antimicrobiana somente para L. monocytogenes, produziu halo de inibição de 21,5 mm. Não houve diferença significativa (p <0,05) entre os tamanhos de halos produzidos pela atividade antimicrobiana do OG e do PP contra L. monocytogenes. A CIM do OG foi de 250 e 0,48 µL.mL-1 contra S. Enteretidis e L. monocytogenes, respectivamente. Já a CIM do PP foi de 0,48 µL.mL-1 contra L. monocytogenes. O OG e o PP apresentaram ação antimicrobiana contra micro-organismos patogênicos e podem ser uma alternativa interessante na conservação de alimentos. Palavras-chave: Compostos naturais. Inibição. Yogurt is one of the most popular fermented dairy products and an excellent medium for new ingredients/food source. This study sought to evaluate and characterize bovine milk (BM) and sheep milk (SM) and yogurt made from bovine (BM) and sheep (SM) milk, and BM:SM mixture with the respective 100:0 fractions: 75:25, 50:50, 25:75 and 0:100, and evaluate their influence on physicochemical parameters, antioxidant, protein profile, microstructure and color analysis for yogurts. Yogurts with higher levels of acidity, protein, fat, total solids, ash and calcium were the ones made from SM.. Regarding the color attributes, all yogurts showed yellow-green characteristics after 21 days of storage by evaluating parameters a* and b*, with a predominance of bovine milk. The antioxidant profile showed a higher concentration at 100:0 and 0:100, but bovine milk has a higher DPPH (2,2-diphenyl-1-picrylhydrazyl) value, while yogurts maintained constant DPPH values during storage, being higher at 0:100. Scanning electron microscopy (SEM) showed that BM (100:0) has a more compact structure, possibly due to the larger size of the fat particles and the lower protein concentration compared to SM (0:100). Sheep milk presented better nutritional value, showing its potential in the manufacture of products.
