É perceptível que o consumidor se preocupa com a qualidade e higiene das preparações alimentares, visto que existem algumas ocorrências de doenças transmitidas por alimentos em estabelecimentos que comercializam alimentos prontos. Com isso, o objetivo desse artigo é avaliar as condições higiênico-sanitárias e o controle microbiológico de um restaurante localizado em Juazeiro-Ba. Para análise das condições higiênico-sanitárias do estabelecimento foi utilizada um checklist sobre boas práticas de manipulação de alimentos com base na RDC Nº216/2004 ANVISA, e classificação segundo a RDC Nº275/2002 ANVISA. Para análise microbiológica, foram coletadas amostra de água, carne frita e de salada crua, ambas prontas para consumo, amostras de superfície do apoio de corte e do liquidificador. As amostras foram avaliadas segundo análises microbiológicas para a contagem de coliformes totais e Escherichia coli em sistema de análise Petrifilm Coliform Count Plate. Em relação às boas práticas de manipulação, o restaurante foi classificado como grupo 2 (56,5 % adequação). Já as análises microbiológicas apontaram contaminação na salada crua por Coliformes totais (3 x 10³ UFC/g), sendo estes incontáveis nas amostras de água, carne frita e liquidificador. O apoio de corte apresentou contaminação por Coliformes totais em níveis aceitáveis para superfícies. Torna-se notório a necessidade de um responsável técnico no local a fim de obter controle higiênico-sanitário adequado, o que poderia evitar a contaminação nos alimentos e superfícies.
Doenças reumáticas são doenças que afetam o sistema musculoesquelético, que têm um grande impacto na vida do doente, comprometendo as suas capacidades físicas e motoras, cujo padrão alimentar pode interferir no curso fisiopatológico. Este artigo teve como objetivo descrever através de uma revisão da literatura do tipo narrativa as intervenções nutricionais na remissão de pacientes com doenças crônicas reumatológicas. Para a análise, foram utilizadas publicações pesquisadas nas bases de dados: SciELO, Lilacs e National, Pubmed e Google Acadêmico, selecionando as que se relacionam com as palavras–chave: dor crônica, reumatologia, dietoterapia e nutrição, em variadas combinações objetivando uma abrangência maior da busca, publicados de modo gratuito e na integra. O resultado das discussões sobre os diversos artigos, demonstrou eficácia das dietas anti-inflamatórias na melhoria da qualidade de vida dos pacientes acometidos de doenças reumatológicas, devido a remissão dos sintomas apresentados por estes pacientes. A inclusão do consumo da cúrcuma, do ômega-3, da banana e do resveratrol (500mg/dia) que aliadas ao controle da taxa das vitaminas D e E dos pacientes avaliados, foram considerados como importante fator na diminuição dos sintomas apresentados.
The Open College for the Third Age (Fati) emerges as a possibility for education for elderly people, offering education in various forms, as well as a range of information, knowledge, and social contacts capable of improving their quality of life and eating behaviors. The aim of this study is to highlight the eating behavior and perception of elderly participants in Fati in the face of the Covid-19 pandemic. This is an exploratory descriptive study using a qualitative-quantitative approach, aiming to gather information on the social, emotional, and health conditions during the Covid-19 pandemic, as well as the eating behavior of the elderly. It was found that there were indeed emotional and social impacts, fears, and impossibility of carrying out day-to-day activities in the lives of these elderly people, but there were no major impacts on their eating behavior. The Covid-19 pandemic affected and impacted elderly individuals and modified the eating habits in Brazil. Thus, new habits can be acquired.
