Physical properties of fluid and semisolid foods, such as density and rheological behavior, must be carefully taken into account on designing unit operations for the processing of such kind of products. In this work, a rotational rheometer of concentric cylinders was used to evaluate the rheological behavior of red guava pulp (Psidium guajava L.), with different soluble solids content (5, 10, and 15°Brix), at four temperatures (10, 30, 50, and 70°C). Also density data were obtained using pycnometry. Models were fitted to the obtained experimental data, in order to mathematically represent the rheological parameters and the density as functions of temperature and soluble solids content. The rheological behavior of the red guava pulp was adequately described by the Ostwald-de-Waele model, with a pseudoplastic behavior. Models to describe the simultaneous effect of temperature and concentration on the density were also presented.
Studies involving the use of microalgae are increasingly intensifying for the potential they present to produce biofuels, because they are a renewable energy source that does not compete directly with food production, and because they enable the obtaining of a fuel with less environmental impact when compared to fossil fuel. In this context, the use of microalgae is directly associated to its capacity to be produced on a large scale and to be extracted from the culture medium. Rheological studies are important for obtaining the information needed in the elaboration of projects and equipment that will be used in various operations existing in systems of production and extraction of algal biomass. In the evaluation of different levels of dry biomass concentration, studies have been conducted of the rheological behavior of cultures of Chlorella sp. BR001 and Scenedesmus sp. BR003. The Power Law model adjusted well to the data of shear stress as a function of strain rate. In all concentrations the cultures showed non-Newtonian behavior. It was observed to Scenedesmus sp. BR003 little effect of biomass concentration on the apparent viscosity and shear stress.KEYWORDS: microalgae, biomass, production, operation.
COMPORTAMENTO REOLÓGICO DE CULTIVOS DE Chlorella sp. E Scenedesmus sp.EM DIFERENTES CONCENTRAÇÕES DE BIOMASSA RESUMO: Estudos envolvendo o uso de microalgas cada vez mais se intensificam, pelo potencial que apresentam para a produção de biocombustíveis, por ser uma fonte de energia renovável que não compete diretamente com a produção de alimentos e por possibilitar a obtenção de um combustível com menor impacto ambiental quando comparado ao combustível fóssil. Neste contexto, a utilização de microalgas está diretamente associada à sua capacidade de ser produzida em larga escala e de ser extraída do meio de cultivo. Os estudos reológicos são importantes para a obtenção das informações necessárias na elaboração dos projetos e dos equipamentos que serão utilizados nas diversas operações existentes nos sistemas de produção e de extração da biomassa algal. Na avaliação de diferentes níveis de concentração de biomassa seca, foram realizados estudos do comportamento reológico de cultivos de Chlorella sp. BR001 e Scenedesmus sp. BR003. O modelo de Lei de Potência ajustou bem aos dados de tensão de cisalhamento em função da taxa de deformação. Em todas as concentrações, os cultivos apresentaram comportamento não newtoniano. Verificou-se para Scenedesmus sp. BR003 pouco efeito da concentração de biomassa na viscosidade aparente e na tensão de cisalhamento.

Biomass is one of the most promising renewable energy sources. Abundantly, the potential as an alternative source to meet the world energy demand has been widely acknowledged. Gasification is one of the most efficient processes concerning thermochemical conversion, having as objective the production of a gas with useful energy power, known as producer gas. In order to optimize thermochemical processes such as the combustion of gases and subsequent gas mixture, computer modeling is becoming an important tool. Aiming to improve the performance of a combustion chamber, previously coupled to a downdraft gasifier, a thermofluidynamic model was elaborated and validated, using the concepts of computational fluid dynamics (CFD). It was reported that temperature, pressure, and velocity distributions of the computational model showed good consistency with experimental data, which allows using this model to predict the performance of this type of combustion chambers.
Resumo: Diversos processos industriais, assim como sistemas de tratamento de água e efluentes, utilizam unidades de contato de fluxo contínuo para promover a mistura e/ou a separação de constituintes. Bacias de sedimentação, unidades de floculação e desinfecção, tanques de equalização de temperatura e separadores água-óleo na indústria petrolífera, são alguns exemplos. A obtenção de campos de escoamento e distribuição de temperatura e/ou concentração no interior da unidade, auxilia no entendimento do processo, permitindo uma avaliação qualitativa do seu desempenho. A utilização de Distribuições de Tempo de Residência (DTR) também é uma ferramenta qualitativa, mas parâmetros extraídos das DTR, conhecidas como curvas de passagem, permitem uma avaliação quantitativa e podem facilitar a interpretação dos resultados. Utilizando uma abordagem de Dinâmica dos Fluidos Computacional, é feita uma avaliação integrada da eficiência hidráulica e hidrodinâmica de unidades de contato. Neste estudo, uma unidade de contato retangular é utilizada como unidade de referência e 2 configurações distintas de entrada e saída foram avaliadas. Os resultados mostram que a inserção de difusores e vertedores ao longo das seções de entrada e saída, respectivamente, distribuem melhor o fluxo, aumentando a eficiência das unidades.
