The results of food intake in adult undergraduate Universidad Nacional de Colombia students suggested inadequate food quality and insufficient intake, thereby leading to an imbalanced diet. This situation was caused by many reasons which could be deduce from the study, such as bad nutritional habits (for example going without food), adverse economic and social factors, especially in cases in which students were living by themselves or living with different people apart from their families.
<p class="Default">El presente artículo muestra los resultados de la investigación realizada con estudiantes de la Universidad Nacional de Colombia, sede Bogotá, que cursaron la asignatura electiva “Estilos de vida saludable” entre el segundo semestre de 2010 y el primer semestre de 2012 y cuyo propósito fue determinar las prácticas alimentarias en los estudiantes e identificar las dificultades percibidas para realizar una alimentación saludable. El estudio fue de tipo observacional, descriptivo y de carácter transversal. Se realizó valoración antropométrica y se determinó el consumo de alimentos mediante un cuestionario de frecuencia de consumo de alimentos. Se encontró que aunque la prevalencia de estudiantes con estado nutricional normal fue alta, se presentó una prevalencia importante de exceso de peso, similar a lo reportado por otros estudios de la misma institución. En cuanto al consumo de alimentos, los resultados de este estudio como los de otras instituciones universitarias, en general reflejan inadecuados hábitos alimentarios con bajo consumo de frutas y verduras y alto consumo de golosinas y dentro de los principales motivos referidos para no realizar una alimentación saludable se reportaron los horarios de estudio, hábitos y costumbres y factores económicos. Estos hallazgos son concordantes con estudios realizados en otros contextos universitarios. De acuerdo a lo anterior, es importante que las universidades se conviertan en entidades promotoras de la salud, considerando que varios años de la vida de los estudiantes transcurren en ellas y es necesario ofrecer posibilidades reales para que durante su permanencia modifiquen de manera positiva sus hábitos y comportamientos alimentarios. </p>
RESUMENObjetivo Determinar el estado nutricional de los estudiantes en edad adulta de pregrado de la Universidad Nacional de Colombia, Sede Bogotá, a través del uso de indicadores antropométricos. Metodología Los datos se recolectaron entre el segundo semestre académico de 2001 y el primero de 2004. Para la determinación del tamaño de la muestra se empleó muestreo estratificado, realizando asignación proporcional por facultades. La muestra estuvo conformada por 1 865 estudiantes, en su mayoría entre los 18 y 25 años de edad, de los cuales el 48,3 % eran mujeres y el 51,7 % hombres. Resultados Se encontró una prevalencia de malnutrición de 21,7 %, siendo mayor el exceso de peso que el déficit (12,4 % vs. 9,3 %). En general, la información obtenida sobre antropometría del brazo dejó ver una situación más crítica para los hombres, especialmente en lo que se refiere a reserva muscular, ya que más del 60 % de ellos tuvo una clasificación de baja o muy baja reserva mientras que en las mujeres este porcentaje fue menor (alrededor del 40 %). Discusión Los resultados de sobrepeso y obesidad encontrados en los estudiantes (11,1 % y 1,3 % respectivamente) fueron inferiores a los reportados para el país, en la Encuesta Nacional de Situación Nutricional (ENSIN) 2005, en la cual se presentó una prevalencia de sobrepeso de 32,3 % y de obesidad de13,8 %. Se debe aclarar, que por no existir otros estudios similares a nivel nacional, se tomó la ENSIN como referencia, aun cuando ésta abarcó un grupo de edad mayor. En conclusión ocho de cada diez estudiantes adultos de pregrado de la Universidad Nacional de Colombia, presentaron un adecuado estado nutricional.Palabras Clave: Estado nutricional, índice de masa corporal, antropometría (fuente: DeCS, BIREME).
El consumo excesivo de alimentos fuente de grasa, acompañado por estilos de vida sedentarios, afecta el peso corporal y la salud. La ingesta de grasa total se relaciona con el índice de masa corporal (IMC) y el perfil lipídico, por tanto la reducción de su consumo disminuye el peso, el IMC, el colesterol total (CT) y el colesterol LDL. La alteración del perfil lipídico es un factor de riesgo para sufrir enfermedades cardiocerebrovasculares; los ácidos grasos trans (AGT) y ácidos grasos saturados (AGS) se consideran factor de riesgo para algunos tipos de cáncer. La reducción del consumo de grasa saturada puede presentar un efecto protector para eventos cardiovasculares. Además, la disminución del consumo de AGS y el aumento de ácidos grasos monosaturados y poliinsaturados puede reducir el colesterol LDL. La normativa regulatoria del contenido de nutrientes de los alimentos debe ser priorizada con medidas eficaces que protejan la salud del consumidor; es así como varios países cuentan con regulaciones sobre el contenido de grasas. Además, se han realizado acciones exitosas en salud pública como la implementación de diferentes tipos de aceite y acciones educativas con el fin de lograr el consumo de alimentos más saludables.
<p>Los azúcares adicionados se definen como los azúcares y jarabes que se agregan a los alimentos durante su procesamiento o preparación. El consumo elevado de azúcares se asocia con diversas patologías como sobrepeso, obesidad, alteraciones hepáticas, desórdenes del comportamiento, diabetes, hiperlipidemia, enfermedad cardiovascular, hígado graso, algunos tipos de cáncer y caries dental. Además, el consumo de azúcares puede contribuir al desarrollo de alteraciones psicológicas como la hiperactividad, el síndrome premenstrual y las enfermedades mentales. Reconociendo el impacto en salud del consumo de azúcares, es necesario considerar la regulación de su contenido en los productos procesados, así como algunas metas de consumo. En varios países se ha realizado esta regulación enfocada a aspectos como clasificación de los productos según contenido de azúcares, información nutricional en el etiquetado, cantidad de azúcar permitido según el alimento, definición de objetivos, metas y estrategias para reducir el consumo de azúcares y aumento de impuestos para los productos que no cumplan lo reglamentado. Al comparar los efectos del consumo de azúcar con los producidos por el alcohol, se plantea que las acciones de control deben ser similares a las del tabaco y el alcohol, en las que se intervienen la promoción, la publicidad, el precio y los lugares de distribución.</p>
