Cette étude a été initiée pour évaluer la qualité de deux légumes-feuilles des plus cultivés et consommés au sud Bénin, l'amarante et la grande morelle en raison de leurs nombreux avantages. De par des pratiques culturales inappropriées, ces légumes sont confrontés à de nombreuses contraintes, parmi lesquels la pollution par les métaux tels que le plomb et le zinc. L'objectif assigné à cette étude était d'une part, d'évaluer le niveau de pollution en plomb et en zinc dans deux légumes-feuilles, produits sur trois périmètres maraîchers de Porto-Novo, et d'autre part, d'évaluer l'impact potentiel de la consommation de ces légumes sur la santé des consommateurs. Pour ce faire, des prélèvements d'eau d'arrosage, de sol et de légumes feuilles ont été effectués sur les trois sites. Les résultats de ces analyses montrent une contamination des légumes en métaux. Ces valeurs évoluent, en ce qui concerne le plomb de 1,80 mg/kg à 2,53 mg/kg pour la grande morelle et de 0,07 mg/kg à 4,30 mg/kg pour l'amarante sur les trois sites. Pour le zinc, ces valeurs sont comprises entre 79,11 mg/kg et 132,07 mg/kg pour la grande morelle et entre 23,85 mg/kg et 141,20 mg/kg pour l'amarante sur les trois sites. Cette contamination est intimement liée à la présence de ces métaux dans l'eau d'arrosage et dans le sol. Cette toxicité de l'eau et du sol est due à la situation géographique du site et aux apports agricoles.
