Le relevé ethno-archéologique de deux moulins à huile encore utilisés récemment au Portugal a permis l'étude de deux filiations techniques de l'antiquité à nos jours : celle du moulin à arbre et à vis, qui se maintient, en bois, avec toute une série d'aménagements, celle du moulin à vis directe qui doit résoudre le problème de la résistance du bâti. La diversité des solutions employées suivant les lieux et les époques comme la permanence, sur la longue durée de ces machines efficaces oblige à réviser certaines affirmations trop vite acceptées en histoire des techniques : le «blocage des techniques» est-il vraiment un concept opératoire? et n'est-ce pas la méthode même qu'il faudrait repenser pour une histoire des techniques un peu vite mésestimée par les historiens?
L'article met en valeur à partir des données des agronomes antiques les contraintes techniques de la culture de la vigne en particulier pour la plantation, le renouvellement et la conduite annuelle du vignoble. Il montre l'interaction entre contraintes techniques, économiques et sociales et l'originalité des choix du vigneron.
Les grandes synthèses historiques nous présentent encore comme des certitudes scientifiques les affirmations péremptoires concernant l'histoire des transports : c'est au Moyen Age qu'apparaît le collier d'épaule ; l'Antiquité ne connaissait qu'un attelage défectueux qui gênait la respiration des chevaux; c'est encore au Moyen Age que l'on découvre le gouvernail d'étambot et la voile latine triangulaire. Dans l'Antiquité, les navires, avec de simples rames comme gouvernails et des voiles carrées qui ne fonctionnaient que vent arrière, ne pouvaient naviguer de nuit et pratiquaient essentiellement le cabotage.
