ABSTRACT. This study evaluated the physical and chemical characteristics of the papaya 'Solo' cv. 'Golden' (Carica papaya L.) coated with propolis extract drawn from various botanical sources, during storage at room temperature. Papayas underwent three types of dip coating propolis extract, in 2.5% (w v -1 ) concentration ('aqueous extract' and 'hydroalcoholic extract of propolis wild type', 'hydroalcoholic extract of the propolis green rosemary'), at ambient temperature and two controls (without coating, one at 'ambient temperature' and the other 'refrigerated'). The variables weight loss, firmness, soluble solids (SS), titratable acidity (TA), maturation index ratio (SS/TA) and hydrogen potential (pH) were evaluated, at three day intervals for twelve storage days. Sensory analyses of the papayas were performed on days three and six of storage, by acceptance testing. Coatings with hydroalcoholic extract of propolis wild type and green rosemary controlled weight loss and firmness in papayas. The coatings showed no effect on the variable SS. Fruit coated with hydroalcoholic extract of rosemary green propolis showed satisfactory results evaluating AT, SS/TA and pH, as well as sensory analysis. Thus, the coating formulated with propolis extract can be used as an alternative to extend the shelf life of papaya fruits.

Purpose The potential of the Cerrado fruit could be explored by development of new products, such as jellies that can be used to add value to the fruit, as well as to preserve this biome. This paper aims to evaluate the effect of processing, the glass packaging type and storage time on the quality of jelly, prepared from reconstituted murici pulp, over 12 months of storage. Design/methodology/approach The authors used a completely randomized design (CRD) in factorial 2 × 5, with two types of glass packaging (transparent and amber) and five storage periods (0, 3, 6, 9 and 12 months), with four replications and the experimental parcel consisting of 80 g of jelly (two bottles of 40 g). The quality of jelly was monitored through 12 months using physicochemical (proximal composition, color, soluble solids, titratable acidity and pH), microbiological (coliforms at 35 °C and 45 °C, filamentous fungi and Salmonella sp) and sensory analyses (sensory acceptance and purchase intent). Findings The pulp processing effectively affected the physicochemical and nutritional composition (proximal composition, soluble solids and color). It was found that only the storage time significantly influenced (p < 0.05) jelly quality, considering the variables analyzed, except the soluble solids, ash, dietary fiber and sensory texture attributes. However, the glass packaging factor (transparent and amber) did not result in significant changes in those variables. Moreover, the pulp processing allows a seasonal fruit with a short harvest period and short post-harvest life to be available to consumers as a new product throughout the year. Originality/value Based on the present study, the native Cerrado fruit such as murici [Byrsonima crassifolia (L.) Rich] is appreciated for its pleasant peculiarities such as color, aroma and taste; however, it is underutilized as food for lack of information and studies. Although the fruit does not have widespread use as food, it is necessary to make the population aware about its importance, not only as a source of nutrients, but also for its functional and sensory potential. Therefore, the production of murici jelly can increase consumption of the fruit, besides being a way to add value and extend the shelf life and sensory acceptance of the product prepared.

-In the present work were evaluated the effects of propolis coatings of various botanical sources on quality traits of bananas cv. Prata (Musa sapientum L.) stored at room temperature. ´Prata´ bananas were selected and submitted to five postharvest treatments: four coatings applied by immersion in propolis extracts at a concentration of 2.5% (w/v) and a control (without coating). Propolis extracts were applied as 1) a wild type aqueous propolis extract, 2) a wild type hydroalcoholic propolis extract, 3) a rosemary green type hydroalcoholic propolis extract and 4) a red type hydroalcoholic propolis extract. The bananas were evaluated at three-day intervals along 12 days for fresh weight losses, flesh firmness, soluble solids (SS), titratable acidity (TA), the ratio SS/TA and pH. Sensory analyses were performed after three and six days of storage by 55 not trained panelists designed for acceptability. At the end of the twelve-day storage period, bananas coated either with the rosemary green hydroalcoholic extract or with the aqueous extract presented lower fresh weight losses in comparison to the bananas of the control treatment. No differences were determined in relation to flesh firmness and along the storage period TA values decreased and pH values increased in bananas of all treatments. SS contents increased towards the end of the storage period that, consequently, contributed to increases in the SS/TA ratio. The most significant increase in SS/TA ratio was determined in bananas coated with the red type hydroalcoholic extract. Taste panelists did not detect significant differences amongst coated and not coated cv. Prata bananas up to six days of storage. The objective herein was to evaluate the effect of processing, packaging type (with and without exposure to light) and storage time on the quality of functional attributes of jelly prepared from curriola pulp. The experimental design was a completely randomized 2 × 5 factorial design, with two levels of packaging (transparent and amber) and five storage periods (0, 3, 6, 9 and 12 months). In general, the processing of curriola pulp determined a slight increase in phenolic compounds and antioxidant activity and a reduction in vitamin C content of freshly prepared jelly. The amber package and storage time promoted higher retention of bioactive compounds, mainly gallic acid, besides reducing the percentage of jelly oxidation, determined by the β-carotene / linoleic acid antioxidant method. A reduction in phenolic compounds and vitamin C was observed, which caused a reduction in the antioxidant capacity of curriola jelly. Of the five phenolic compounds identified in freshly prepared curriola jelly, gallic acid was identified as the major compound. In addition, the use of amber packaging, which prevents the incidence of light, may favor the maintenance of bioactive compounds during storage period of curriola jelly under environmental conditions.

The flour from the pulp of marolo (Annona crassiflora Mart.) is an important source of fiber, however, its use as a food ingredient requires investigation as to its functionality. Thus, this work aimed to evaluate the physical, chemical, nutritional and technological functional properties of the flour obtained from the pulp of marolo, thus verifying its potential application in food products. The analyzes performed on the flour were proximal composition, mineral composition, vitamin C content, total carotenoids, beta-carotene, antioxidant activity and technological functional properties. The flour presented considerable amounts of fibers, especially the insoluble fraction, being 25.47 g.100g-1, 8.57 g.100g-1 for soluble dietary fiber and 34.04 g.100g-1 for total dietary fiber. . The levels of vitamin C and total carotenoids, observed in the flour of the pulp of marolo, were 173.77 mg.100g-1, 0.56 mg.100g-1 and 0.08 mg.100g-1, respectively. The minerals that showed the highest concentration in the pulp flour were phosphorus (1768.53 mg.kg-1) and calcium (1512.73 mg.kg-1). The antioxidant activity was more effective when performed in aqueous extraction. The flour has shown to have important technological functional properties, such as solubility in water and the ability to form emulsion. Therefore, marolo pulp flour has the potential to be commercialized and used in food products in order to improve and enrich its nutritional and technological qualities.

Orange (Citrus sinensis) is a non-climacteric fruit that can be stored for long periods. However, the development of physiological and phytopathological disorders limits its postharvest storage. The objective of this study was to evaluate the effects of coating orange with propolis extract on the physicochemical characteristics of the "Pera" orange during storage under ambient temperature. The fruits were selected and submitted to five postharvest treatments, three different forms of dip coating (70% alcohol, hydroalcoholic extract of propolis to 2.5%, hydroalcoholic extract of propolis to 5%), and two controls (one uncoated and one uncoated fruit kept under refrigeration). The variables weight loss, firmness, total soluble solid (TSS), titratable acidity (TA), ratio TSS/TA, and hydrogenic potential (pH) were evaluated at 0, 10, 18, and 25 days of storage. Treatment with propolis extract coating reduced the weight loss until the 18th day of storage. The fruit coated with propolis extract remained firmer up to 25 days of storage; this result is not significantly different from that of other postharvest treatments. The postharvest "refrigerated" treatment showed lesser weight loss and firmness during the storage period as a result of chilling injury. Coating with propolis extracts resulted in significant alterations of small magnitude in the variables TSS, TA, TSS/TA, and pH in oranges at the end of the storage period.
