Bioactive peptides are considered the new generation of biologically active regulators that not only prevent the mechanism of oxidation and microbial degradation in foods but also enhanced the treatment of various diseases and disorders, thus increasing quality of life. This review article emphasizes recent advances in bioactive peptide technology, such as: (i) new strategies for transforming bioactive peptides from residual waste into added-value products; (ii) nanotechnology for the encapsulation, protection and release of controlled peptides; and (iii) use of techniques of large-scale recovery and purification of peptides aiming at future applications to pharmaceutical and food industries.
As farinhas são muito utilizadas no processamento de diversos produtos de panificação e o seu desempenho tecnológico depende de características funcionais previamente descritas. O objetivo deste trabalho foi avaliar as propriedades funcionais tecnológicas de farinhas comerciais de origem vegetal. Foram realizadas análises de índice de absorção de água, capacidade de absorção de óleo, solubilidade em água, capacidade de formação de espuma, estabilidade da espuma, capacidade emulsificante, estabilidade da emulsão e capacidade de formação de gel. A farinha da casca de maracujá apresentou o maior índice de absorção de água (4,85%). Todas as farinhas apresentaram valores satisfatórios para capacidade de absorção de óleo. Os maiores valores de solubilidade em água foram apresentados pelas farinhas de linhaça dourada, feijão branco, linhaça marrom, uva e maracujá. Apenas as farinhas comerciais de trigo integral, feijão branco, banana, trigo branca e soja apresentaram capacidade espumante e estabilidade da espuma durante 120 minutos. Exceto pelas farinhas de uva e trigo branca, as farinhas comerciais avaliadas demonstraram atividade emulsificante interessante para a indústria de alimentos. As farinhas de aveia A e B e trigo branca, apresentaram formação de gel já na menor concentração avaliada. As farinhas vegetais comerciais estudadas apresentaram características que permitem seu uso como ingrediente para diversas aplicações de interesse para a indústria de alimentos.
Many essential oils (EOs) of different plant species possess interesting antimicrobial effects on buccal bacteria and antioxidant properties. Eugenia klotzschiana Berg (pêra-do-cerrado, in Portuguese) is a species of Myrtaceae with restricted distribution in the Cerrado. The essential oils were extracted through the hydrodistillation technique using a modified Clevenger apparatus (2 hours) and chemically characterized by GC-MS. The major compounds were α-copaene (10.6 %) found in oil from leaves in natura, β-bisabolene (17.4 %) in the essential oil from dry leaves and α-(E)-bergamotene (29.9 %) in oil from flowers. The antioxidant activity of essential oils showed similarities in both methods under analysis (DPPH and ABTS˙+) and the results suggested moderate to high antioxidant activity. The antibacterial activity was evaluated by determining minimum inhibitory concentrations (MICs), using the microdilution method. MIC values below 400 µg/mL were obtained against Streptococcus salivarius (200 µg/mL), S. mutans (50 µg/mL), S. mitis (200 µg/mL) and Prevotella nigrescens (50 µg/mL). This is the first report of the chemical composition and antibacterial and antioxidant activities of the essential oils of E. klotzschiana. These results suggest that E. klotzschiana, a Brazilian plant, provide initial evidence of a new and alternative source of substances with medicinal interest.
A B S T R A C T'Okara' is the insoluble part obtained after the aqueous extraction of soybeans, generated in large quantities as a by-product of the 'tofu' industry or soybean water-soluble extract. This work aimed to study 'okara' convective drying kinetics, determine the effective diffusion coefficient, and obtain activation energy and thermodynamic properties under different drying conditions. The by-product 'okara' was obtained from the processing of BRS 257 soybean water-soluble extract, homogenized and dried in a forced-air oven at temperatures of 40, 50, 60 and 70 °C until constant weight. Among the analysed models, Wang & Singh was selected to represent the drying phenomenon. Effective diffusion coefficient increased with the temperature rise, and the activation energy for the net diffusion in the drying was 28.15 kJ mol -1 . Enthalpy and Gibbs free energy increased with the elevation of drying temperature.Propriedades termodinâmicas e cinética de secagem de okara R E S U M O Okara é a parte insolúvel obtida após a extração aquosa dos grãos de soja, gerado em grande quantidade como um subproduto da indústria de tofu ou de extrato hidrossolúvel de soja. Objetivou-se estudar a cinética de secagem convectiva do okara, determinar o coeficiente de difusão efetivo, obter a energia de ativação e as propriedades termodinâmicas em diferentes condições de secagem. O subproduto okara foi obtido a partir do processamento de 'extrato hidrossolúvel de soja' de grãos de soja BRS 257, homogeneizado e submetido à secagem em estufa de ventilação forçada nas temperaturas de 40, 50, 60 e 70 °C até atingirem peso constante. Dentre os modelos analisados, Wang & Singh foi o selecionado para representar o fenômeno de secagem. O coeficiente de difusão efetivo aumentou com a elevação da temperatura e a energia de ativação para a difusão líquida na secagem foi de 28,15 kJ mol -1 . A entalpia decresceu com o aumento da temperatura de secagem, enquanto a entropia e energia livre de Gibbs aumentaram com o acréscimo da temperatura de secagem.
