Major physicochemical and antioxidant changes during peach-palm (Bactris gasipaes H.B.K.) flour processing. Abstract-Introduction. Several studies have demonstrated that food processing affects nutrients such as bioactive compounds, protein, starch, fat, fiber, minerals and antioxidant capacity. Our study examined how heat changes the physicochemical composition and antioxidant capacity of peach-palm fruit (Bactris gasipaes H.B.K.) during flour production. Materials and methods. Five commercial batches of fruit were assessed for total contents of phenolic compounds and carotenoids, and hydrophilic oxygen radical absorbance capacity (H-ORAC). The fruit was then cooked and eventually processed into flour. Results and discussion. No significant changes were found for contents of fat, protein, starch and dietary fiber during flour production. Cooked peach-palm fruit is a source of Mg, Mn, Cu and K, with 100 g of fruit containing between 5% and 13.5% of the recommended daily intake. Cooking also increased carotenoids by 17%, thus helping to compensate for the 28% loss during drying. No stage of processing affected polyphenol contents or H-ORAC. Conclusion. Because of its high bioactive compound content, peach-palm flour shows potential for use in the development of functional foods. Notre étude a examiné comment la chaleur modifiait la composition physico-chimique et la capacité antioxydante des fruits de pejibaie (Bactris gasipaes HBK) au cours de la production de farine. Matériel et méthodes. Cinq lots commerciaux de fruits ont été évalués pour leur contenu total en composés phénoliques et caroténoïdes, et leur capacité hydrophile d'absorption des radicaux oxygénés (H-ORAC). Les fruits ont ensuite été cuits et éventuellement transformés en farine. Résultats et discussion. Aucun changement significatif n'a été trouvé quant au contenu des fruits en matières grasses, protéines, amidon et fibres alimentaires durant la production de farine. Le fruit de pejibaie cuit est une source de Mg, Mn, Cu, et K, dont 100 g de fruits contiennent entre 5 % et 13,5 % de l'apport quotidien recommandé. La cuisson a permis également d'augmenter de 17 % la teneur en caroténoïdes, ce qui contribue à compenser la perte de 28 % observée lors du séchage. Aucune étape de la transformation n'a affecté les teneurs en polyphénols ou la valeur de H-ORAC. Conclusion. En raison de sa haute teneur en composés bioactifs, la farine de pejibaie est potentiellement intéressante à utiliser pour le développement d'aliments fonctionnels.

Durante 2004, en san José, se evaluó el efecto de diferentes proporciones de leche de cabra (c) y leche de vaca (v) (0%c/100%v, 30%c/70%v, 50%c/50%v, 70%c/30%v y 100%c/0%v), sobre el pH, la viscosidad y la sinéresis de un yogurt batido de fresa, durante los días 1, 7, 14 y 21 de almacenamiento en refrigeración a 4-5°c. el pH disminuyó en almacenamiento acentuadamente en los primeros siete días e indistintamente para todas formulaciones (p≤0,05) desde ámbitos iniciales de 4,35-4,40 hasta 4,25-4,30. Durante los primeros siete días aumentó la viscosidad de todas las muestras, para posteriormente descender hasta el día 21. Las muestras con 100% leche de cabra presentaron menor viscosidad (p≤0,05) (media = 11277 cp) que las elaboradas con 100% leche de vaca (media = 19979 cp). La sinéresis para todas las muestras descendió con el tiempo. La muestra de mayor sinéresis durante todo el periodo fue la de 100% leche de vaca (media = 9,4%), mientras la de menor fue la de 100% cabra (media = 2,1%). Para la sinéresis se encontró una interacción significativa (p≤0,05) entre el día de almacenamiento y el tipo de leche, concluyéndose que la sinéresis disminuyó con el tiempo y con el mayor contenido de leche de vaca. se evaluó con 105 jueces el efecto de diferentes formulaciones (30%c/70%v, 50%c/50%v, 70%c/30%v y 100%c/0%v), sobre el agrado general así como la aceptación del color y textura. La formulación de mayor agrado global (p≤0,05) fue la de 30% leche de cabra, que en promedio alcanzó un valor de 8,1 en una escala hedó nica híbrida 10 cm.
SummaryThe variability of the physicochemical composition, carotenoid and polyphenol contents and hydrophilic antioxidant capacity of fresh peach palm (Bactris gasipaes) fruit was studied with a view to its exploitation as a potential source of bioactive compounds. The variability present in five batches of peach palm fruit obtained from two regions in Costa Rica: Tucurrique (T) and Pérez Zeledón (PZ), was studied. Significant differences were found for fruit weight, length and width amongst the batches studied. The moisture, fat and protein contents of the Tucurrique fruit were significantly lower than those from Pérez Zeledón. No significant difference in starch content was found between any of the batches of peach palm fruit studied. In terms of antioxidant compounds, the total carotenoid content ranged between 109 and 202 µg β-carotene equivalents/g dry weight (dw), while the total polyphenol content varied from 54 to 106 mg gallic acid equivalents (GAE) /100 g (dw). Both these components presented variability amongst the five batches. The antioxidant capacity was determined by the ORAC method and only the PZ 3 sample presented significant differences from the other four batches. The average hydrophilic antioxidant capacity was 37 ± 7 µmol of Trolox equivalents (TE)/g (dw). Overall, the peach palm fruit showed potential to be used in the development of functional foods since the variability of the raw peach-palm fruit, determined by applying a principal component analysis, showed that some characteristics of this fruit were not affected by harvest time and showed no differences between the batches from the two areas. ResumoA variabilidade da composição físico-química e do teor de carotenoides e polifenóis, e a capacidade antioxidante hidrofílica da fruta fresca da pupunha (Bactris gasipaes) foram pesquisadas, a fim de avaliar o seu aproveitamento como uma fonte potencial de compostos bioativos. Estudou-se a variabilidade de cinco lotes de frutos da Costa Rica das regiões Tucurrique (T) e Pérez Zeledón (PZ). Foram encontradas diferenças significativas para a massa, o comprimento e a largura entre os lotes. Os teores de umidade, gordura e proteína dos frutos de Tucurrique foram significativamente menores do que os teores dos frutos de Pérez Zeledón. Não foi encontrada diferença significativa para o teor de amido entre todos os lotes de pupunheira estudados. Para os compostos antioxidantes, o teor de carotenoides totais variou entre 109 e 202 mg equivalentes β-caroteno / g de matéria seca (ms), enquanto o teor de polifenóis totais variou no intervalo de 54 a 106 mg de equivalentes de ácido gálico (GAE) / 100 g (ms). Características químicas, físicas y sensoriales de un queso de cabra adaptado del tipo "Crottin de Chavignol". el objetivo del presente trabajo fue determinar la aceptación del público por un queso caprino previamente caracterizado adaptado del "crottin de chavignol" que fue producido en la zona de Tres ríos, cartago, costa rica, durante el segundo semestre del año 2006. se elaboraron 10 lotes de queso con el procedimiento artesanal empleado en Tres ríos de cartago y con leche evaluada químicamente para proteína (p), lactosa (l), sólidos totales (st), sólidos no grasos (sng), sólidos grasos (g), peso específico(pe) y ácido láctico (al). Treinta muestras aleatorias fueron evaluadas fisicoquímicamente para contenido de humedad (H), materia seca (ms), acidez (a), sal (s), proteína (P), grasa (g) y color en las escalas cieLab y cieLch. cincuenta muestras aleatorias se evaluaron con un análisis de perfil de textura abarcando dureza (D), elasticidad (e), cohesividad (c), masticabilidad (m) y adhesividad (aD). La calidad sensorial se comparó con la de un queso crema vacuno empleando una prueba sensorial afectiva seguida de un análisis de conglomerados de Ward. el queso obtenido presentó en promedio un rendimiento de 17,5 %. el 55 % de los consumidores mostró igual aceptación por ambos quesos, mientras que a un 45 % le desagrado el caprino.
