IntroduçãoNa região Centro-Oeste, onde predomina o cerrado, ocorrem muitas espécies de frutas nativas consideradas fontes de proteínas, fibras, energia, vitaminas, cálcio, fósforo e ácidos graxos (SILVA et al., 1994;SANO;ALMEIDA, 1998; MARIN, 2006). Muitas frutas são comercializadas e consumidas in natura ou processadas em preparo caseiro, com grande aceitação popular (ALMEIDA, 1998). O aproveitamento tecnológico de espécies frutíferas nativas pode constituir uma preciosa fonte de alimentos e riqueza para o país.A bocaiúva é um fruto que pertence à família Palmae, sendo a espécie Acrocomia aculeata (Jacq.) Lodd. abundante e nativa no Estado do Mato Grosso do Sul. A polpa e a amên-doa na forma in natura são consumidas pela população local ou nas preparações da culinária regional, tais como sorvetes, bolos, paçoca doce e cocada, podendo enriquecer a dieta como fonte complementar de nutrientes essenciais (ALMEIDA, 1998;SANO;ALMEIDA, 1998).Frutas e vegetais são exemplos de importantes fontes de nutrientes essenciais, entre eles, encontram-se os minerais, que desempenham uma função vital no desenvolvimento e boa saúde do corpo humano. Os minerais são essenciais à manutenção de várias funções de importância fisiológica como na contratibilidade muscular, na função dos nervos, na coagulação sanguínea, nos processos digestivos e no equilíbrio ácido-básico (FRANCO, 2004;HARDISSON et al., 2001).Hortaliças e frutas também são consideradas fontes de carotenóides, os quais atuam não apenas como corantes naturais, mas como compostos bioativos com atuação benéfica à AbstractWith the aim at stimulating the consumption of natural food from the Brazilian Cerrado (vast tropical savanna ecoregion of Brazil), the contens of moisture, lipid, protein, carbohydrate, ash, fiber, minerals, and main carotenoids were determinated in the bocaiuva Acrocomia aculeata (Jacq.) Lodd. pulp. The edible portion of the fruit (pulp and kernel) corresponded to 50% of the whole fruit. The pulp presented 52.99% of moisture, 8.14% of total lipids, 1.5% of protein, 22.08% of carbohydrates, 1.51% of ash, and 13.76% of fiber. The energetic value was estimated to be 167.67 kcal.100 g -1 of wet pulp, which is higher than the other fruits from this region. Among the minerals examined, potassium was the element in higher concentrations (766.37 ± 18.36 mg.100 g ). The bocaiuva pulp may be classified as a rich source of copper for children, as a source of zinc and potassium for children, and as a source of copper and potassium for adults according to the dietary recommendation intake of those minerals. The bocaiuva pulp can be considered as rich in b-carotene (49.0 ± 2.0 mg.g -1 of integral pulp), the predominant carotenoid identified in the pulp, which can contribute to the enrichment of the regional diet, in supplementary diet programs, as a natural source of that nutrient as well as of vitamin A, copper, potassium and zinc minerals.
Visou-se caracterizar os carotenóides, avaliar sua atividade próvitamínica A e verificar as perdas destes pigmentos decorrentes do cozimento convencional da polpa do piqui (Caryocar brasiliense Camb) com arroz, simulando o preparo de acordo com os hábitos regionais. Tanto as amostras cruas quanto as cozidas apresentaram os mesmos carotenóides: caroteno, caroteno, criptoflavina, criptoxantina, anteraxantina, zeaxantina e mutatoxantina. O valor médio de carotenóides foi de 231,09 e 154,06 g/g de polpa crua e cozida, respectivamente. O teor de vitamina A correspondeu a 494 ER/100 g de polpa in natura e 375 ER/100 g de polpa após o cozimento. Em todas as amostras analisadas, o caroteno foi o principal pigmento responsável pela atividade próvitamínica A encontrada. A perda de carotenóides decorrente do cozimento convencional da polpa do piqui (C. brasiliense Camb) foi em média de 30,25%, correspondendo à perda média de 12,11% no teor de vitamina A. Abstract This work aimed to characterize carotenoids, to evaluate its provitamin A activity and to verify the losses of those pigments due to the conventional cooking of the pulp of piqui (Caryocar brasiliense Camb) with rice, simulating the preparation in agreement with the regional habits. Raw and cooked samples presented the same carotenoids: carotene, carotene, cryptoflavin, cryptoxantin, antheraxanthin, zeaxanthin and mutatoxanthin. The average value of carotenoids was of 231,09 and 154,06 g/g of raw and cooked pulp, respectively. The vitamin A content corresponded to 494 RE/100 g of in natura pulp and 375 RE/100 g of pulp after cooking. In all the samples analyzed, the carotene was the main responsible pigment for the provitamin A activity found in the pulp. The carotenoids loss due to the conventional cooking of the pulp of piqui (C. brasiliense Camb) was of 30,25%, corresponding to the average loss of 12,11% in the vitamin A value.
Realizou-se a determinação de nutrientes calóricos e oligoelementos macro e microminerais em dois frutos nativos do Estado de Mato Grosso do Sul (MS), o araçá (Psidium guineense SW.) e o tarumã (Vitex cymosa Bert). Os dados obtidos mostraram que tanto o araçá quanto o tarumã, pelo alto teor de umidade, apresentam baixo valor calórico (respectivamente, 44,5 e 39,6k cal/ 100 g). Foi verificado em ambos os frutos valores (g/ 100 g de amostra integral) de glicídios redutores e não-redutores (respectivamente, 7,8 e 9,3) mais elevados do que os dos demais nutrientes energéticos encontrados. Em relação aos teores de minerais, o araçá apresentou maior quantidade de cálcio (26,8 mg/ 100 g), magnésio (17,9 mg/100 g), manganês (0,3 mg/ 100 g) e cobre (0,12 mg/100 g), comparativamente ao fruto tarumã. Entretanto o tarumã apresentou teores mais elevados de fósforo (21,1 mg/100 g), potássio (287,8 mg/100 g) e ferro (0,43 mg/100 g) do que o araçá. Os frutos estudados podem ser considerados, de maneira geral, boas fontes de minerais quando comparados com frutos mais comumente consumidos pela população, como a maçã, a pêra e o abacaxi. O pescado é um alimento importante na dieta de inúmeros grupos populacionais, não apenas como fonte de proteínas de alta qualidade nutricional, mas ainda como reserva significativa de ácidos graxos poliinsaturados da série ômega 3 (ω-3), aos quais são atribuídos numerosos benefícios à saúde humana ( BADOLATO et al., 1994;ÇELIK;DILER;KÜÇÜKGÜLMEZ, 2005;VILA NOVA;GODOY;ALDRIGUE, 2005). Os ácidos ω-3 e ω-6 são precursores dos ácidos eicosanóides (prostaglandinas, tromboxanas e leucotrienos) e são essencialmente fornecidos pela dieta, uma vez que não são sintetizados pelo organismo humano. O ácido linoléico (ω-6) origina o ácido araquidônico, que é o precursor de eicosanóides tromboxanos e a prostaciclina I 2 , respectivamente promotor e inibidor da agregação plaquetária. O ácido graxo alfa-linolênico (ω-3), precursor dos ácidos eicosapentaenóico (EPA) e docosahexaenóico (DHA), os quais além da função no desenvolvimento e funcionamento do sistema nervoso, fotorecepção e sistema reprodutivo (ÇELIK; DILER; KÜÇÜKGÜLMEZ, 2005;SIDHU, 2003;TAPIERO et al., 2002) são apontados como redutores de risco de doenças coronarianas, hipertensão moderada, incidência de diabetes e prevenção de certas arritmias cardíacas e morte súbita. AbstractBrazilian rivers have a great diversity of fish, however, little is known about the nutritional potential of most native fish. The present study evaluates the centesimal composition and the fatty acid profile of the muscle tissue of four species of fish: pintado (Pseudoplatystoma coruscans), cachara (Pseudoplatystoma fasciatum), pacu (Piaractus mesopotamicus) and dourado (Salminus maxillosus), from the Miranda River in the pantanal region of Mato Grosso do Sul. Dourado had the highest protein content (21.12%), while pintado had the lowest value (17.90%). There was no difference between the protein levels of cachara and pacu (approximately 18%). Pacu fillets were revealed to be the most caloric and this value did not change when the dry sample was considered. The four fish species presented oleic acid (20.25 to 37.25%) as the predominant fatty acid, followed by palmitic acid (19.96 to 21.37%) and stearic acid (7.39 to 9.82%). Total polyunsaturated fatty acid contents varied from 5.24 in pacu to 17.33% in pintado; and total saturated fatty acids from 32.91 to 38.89%. Cachara, pintado and dourado species presented equal proportions of polyunsaturated fatty acids of the ω-3 family (average of 7.80%) and of the ω-6 family (average of 8.40%), while pacu presented the lowest contents of these fatty acids (1.13 and 4.11%, respectively). All the samples studied presented ω6/ω3 and hypocholesterolemic/hypercholesterolemic (HH) indexes that indicate good nutritional quality. Carotenóides pró-vitamínicos a e composição em ácidos graxos do fruto e da farinha do Bacuri (scheelea phalerata mart.), Hiane et al.
Considering that annatto seeds are rich in protein, the present work aimed to evaluate the biological quality of this nutrient in the meal residue originating from annatto seed processing. We determined the general composition, mineral levels, amino acid composition and chemical scores, antinutritional factors, and protein quality using biological assays. The following values were obtained: 11.50% protein, 6.74% moisture, 5.22% ash, 2.22% lipids, 42.19% total carbohydrates and 28.45% fiber. The residue proved to be a food rich in fiber and also a protein source. Antinutritional factors were not detected. The most abundant amino acids were lysine, phenylalanine + tyrosine, leucine and isoleucine. Valine was the most limiting amino acid (chemical score 0.22). The protein quality of the seed residue and the isolated protein showed no significant differences. The biological value was lower than that of the control protein but higher than that found in other vegetables. Among the biochemical analyses, only creatinine level was decreased in the two test groups compared to the control group. Enzyme tests did not indicate liver toxicity. The results showed favorable aspects for the use of annatto seed residue in the human diet, meriting further research.Keywords: biological value; protein quality; annatto.Practical Application: The evaluation of biological quality of the annatto seeds' protein showed favorable aspects for the use in the human diet.
RESUMO -Este trabalho foi realizado com o objetivo de avaliar a conservação pós-colheita de guavira (Campomanesia sp.), em função da utilização de 1-MCP e de atmosfera modificada passiva, além do armazenamento à temperatura ambiente e a 11°C. Os frutos foram colhidos no ponto de maturidade fisiológica, subdivididos em parcelas e submetidos à aplicação de 1-Metilciclopropeno (1-MCP) (700 ηL.L -1 /12horas) e à atmosfera modificada passiva por meio do uso de embalagem plástica. Foram realizadas análises de perda de massa, sólidos solúveis, acidez titulável, vitamina C, fenóis totais, atividade antioxidante e aparência geral dos frutos. O uso de 1-MCP não reduziu a perda de massa dos frutos, tanto em armazenamento ambiente quanto refrigerado, o que foi verificado com o uso da atmosfera modificada passiva. O armazenamento refrigerado reduziu a perda de massa dos frutos e prolongou a vida útil destes com manutenção dos teores de vitamina C, fenóis totais e atividade antioxidante. Os teores finais de sólidos solúveis e vitamina C dos frutos não apresentaram interferência significativa em relação aos tratamentos utilizados, e os valores de acidez titulável aumentaram ao final do período de armazenamento, com exceção dos frutos tratados com 1-MCP associado com atmosfera modificada e armazenados em ambiente. O uso de 1-MCP e de atmosfera modificada passiva prolongaram a vida útil dos frutos tanto em armazenamento ambiente, quanto refrigerado, com melhor aparência geral dos frutos, principalmente quando associados. POST-HARVEST CONSERVATION OF GUAVIRA (Campomanesia sp.)ABSTRACT -This study aimed to evaluate the postharvest conservation of guavira (Campomanesia sp.), depending on the use of 1-MCP and modified atmosphere, as well as storage at room temperature and at 11°C. The fruits were harvested at physiological maturity, divided into portions and treated with 1-methylcyclopropene (1-MCP) (700 ηL.L -1 for 12 hours) and modified atmosphere, with plastic packaging. The fruits were submitted to the analysis of weight loss, soluble solids, titratable acidity, vitamin C, total phenols and antioxidant activity and general appearance. The use of 1-MCP did not reduce the fruit weight loss in both ambient and cold storage, which was verified using the modified atmosphere. The cold storage reduced the mass loss of the fruits and extended the shelf life maintaining the levels of vitamin C, total phenolics and antioxidant activity contents. The final concentration of soluble solids and vitamin C of the fruits showed no significant interference in relation to treatments. The titratable acidity values increased during the storage period, with the exception of fruits treated with 1-MCP associated with modified atmosphere and stored in room temperature. The use of 1-MCP and modified atmosphere extended the shelf life of fruits both in storage environment and cold, with a better overall appearance of the fruit, especially when combined.
This study determined the proximate composition and fatty acid profile of the lipid fraction in muscle tissue (fillet) of seven fish species from the Miranda River, Brazil. Total lipid content had the largest coefficient of variation among species (73%), while protein content had the smallest (4.5%), allowing Pimelodus argenteus (mandiprateado) to be categorized as lean fish; Pimelodus maculatus (mandi-amarelo), Hemisorubim platyrhynchos (jurupoca), and Pinirampus pirinampu (barbado) as species with medium fat content, and Paulicea luetkeni (jaú) and Surubim lima (jurupensém) as fatty fish. In all the species investigated, palmitic acid (23.76-25.99%) was the predominant saturated fatty acid. Oleic acid (16.09-32.90%) was the most abundant monounsaturated fatty acid. Total omega-6 polyunsaturated fatty acids (5.99-15.56%) were the predominant polyunsaturated fatty acids, except in Ageneiosus brevifilis (palmito), in which total omega-3 polyunsaturated fatty acids predominated (10.30%). All the species had favorable indices of nutritional quality for total lipids, with respect to human consumption.
