Tendo em vista que as frutas, por serem perecíveis, deterioram-se, com inúmeras perdas nutricionais e econômicas, surge à necessidade de caracterização e desenvolvimento de novos produtos que minimizem perdas mantendo qualidade e aumentando a vida útil do produto. Deste modo a presente pesquisa foi desenvolvida com o intuito de obter a polpa e espuma de umbu (Spondias tuberosa Arruda Câmara) e posterior caracterização físico-química comparando-as de acordo com os parâmetros de umidade, densidade, cinzas, acidez titulável total - ATT, pH, sólidos solúveis totais - SST, vitamina C, açúcares totais, redutores e não redutores. As médias dos valores das análises físico-químicas da polpa estão em concordância com os valores estipulados pelas normas de qualidades requeridas para frutos de umbuzeiro. Os valores encontrados na caracterização da espuma apresentaram diferenças significativas a 5% de probabilidade pelo teste de Tukey em comparação com a polpa in natura. A adição dos agentes formadores de espuma influenciou no aumento dos teores pH, cinzas, sólidos solúveis totais e açúcares. No entanto, de modo geral as perdas foram mínimas, apresentando ótimos valores físico-químicos e preservação da qualidade em comparação com a polpa in natura, obtendo assim um produto de boa qualidade nutricional.
Entre as Anacardiaceae cultivadas no Brasil, a manga (Mangifera indica L.) é umas das que apresenta destaque econômico. Este fruto é rico em antioxidantes, como carotenoides, vitamina C e compostos fenólicos. Este alimento contitui-se de polpa de aroma, cor e sabor agradáveis. Um entrave na disponibilidade deste alimento é sua sazonalidade. Por isso, há necessidade de industrialização do fruto. As espumas tem finalidade de propiciar textura, aparência e consistência aos diferentes produtos alimentícios. Com isso foi feito processamento das frutas e elaboração da polpa de manga em camada de espuma. Aditivos usados neste trabalho foram Emustab® e Super Liga Neutra®. Foram utilizados em conjunto, proporções iguais, nas concentrações 3, 4 e 5%, com tempo de aeração de 5, 10 e 15 min, e de pesagem 60, 120 e 180 min. Com os resultados obtidos conclui-se que 4 % de aditivos, no tempo de aeração de 10 min é mais apropriado para elaboração do produto. Esta variante não apresentou diferenças significativas relacionadas aos valores de líquido desprendido comparado a maior concentração testada.
ResumoA manga (Mangifera indica L) é um fruto de grande potencial econômico, disseminado em diversas áreas do território brasileiro. Uma propriedade indesejável deste fruto é sua alta perecibilidade. Por conta disso, parte deste alimento, quando transportado por longas distâncias, é perdida. Uma maneira de evitar as perdas associadas, não só ao transporte, mas também ao manejo, é processar o alimento. O congelamento do alimento em polpa preserva sua constituição nutricional e permite que o mesmo seja transportado por períodos maiores de tempo. A caracterização físico-química do alimento é uma forma de auxiliar a indústria na escolha de matérias-primas para o processamento. Apesar de existir na literatura vasto trabalho a respeito das mais diversas variedades de manga, a geografia, o plantio, a adubação e a colheita, são fatores que alteram propriedades do fruto. Este trabalho procura contribuir para investigações científicas aprofundadas sobre o fruto processado. Diante o exposto, objetivou-se analisar a polpa de manga, variedade espada, a respeito de suas propriedades físico-químicas, comparar os valores obtidos com as normas regulamentadoras vigentes e com trabalhos científicos desenvolvidos por diferentes pesquisadores. Os resultados obtidos foram: açucares redutores 5,41 %, açucares não redutores 9,52 %, cinzas 0,36 %, sólidos solúveis em °Brix 18 % e acidez total titulável 0,43 %. Os valores de açúcares redutores e não redutores obtidos se mostraram superiores aos registrados na literatura, sendo que estes foram desenvolvidos com outras variedades de mangas diferente da analisada no presente estudo. De modo geral os valores obtidos correspondem ao Padrão de Identidade e Qualidade estabelecida para polpa de manga.Palavras-Chave: processamento, caracterização, fruta. Introdução
Resumo A busca por alimentação saudável, associado ao ritmo de vida pós-moderno, tem feito crescer a procura por alimentos práticos e prontos para consumo. Alimentos minimamente processados tem ganhado espaço nesse mercado por oferecerem essa praticidade. O processamento mínimo consiste em operações (higienização, descascamento, fatiamento, corte, armazenamento) que objetiva praticidade e melhor conservação do alimento. Entretanto durante este processo pode ocorrer perdas relacionadas à suas propriedades nutricionais. Objetivou-se neste trabalho, o processamento mínimo e caracterização dos frutos de kiwi (Actinidea deliciosa) e comparação dos valores obtidos com a literatura. Os parâmetros analisados no trabalho foram: cinzas (%), umidade (%), pH (%), concentração de ácido ascórbico(mg/100g), sólidos solúveis (°Brix) e acidez (%). Os valores obtidos para pH foi de 4,01%, umidade 87,3%, cinzas 0,57%, ácido ascórbico 99,81(mg/100g) e sólidos solúveis média igual á 12,1°Brix. Destes parâmetros apenas a acidez (0,41%) não corresponde a valores encontrados na literatura, tendo um valor inferior. Diante os resultados obtidos concluiu-se que, os frutos de kiwi minimamente processados apresentaram características físico-químicas dentro dos padrões estabelecidos, podendo ser uma alternativa no mercado consumidor de alimentos práticos, e serem empregados na elaboração de novos produtos além de agregar valor aos existentes no mercado. Cnidoscolus quercifolius, commonly known as “favela”, “faveleira”, “urtiga-branca”, and “cansanção”, is a plant that is native to the Caatinga biome. The species is extremely tolerant to adverse weather conditions and is of great importance for the population of the semi-arid region, as it has uses in afforestation, the recovery of degraded areas, sawmills, fuels, animal feed, and food production. In addition, the species is popularly known for its medicinal uses, and it has been scientifically tested for such purposes. The objective of the research was to compile updated information about the chemical composition, biological activities, and botanical characteristics of the species, in addition to information about its use in folk medicine. It was observed that C. quercifolius has a strong usage among people in the Brazilian Caatinga for ophthalmic and other medical conditions, including inflammation in general, scarring, and infections. Studies involving the species have shown its effectiveness as antinociceptive, cytotoxic agent, antioxidant, and insecticide, as also thanks to its anti-inflammatory, hypoglycemic, and repellent characteristics. Other tests have indicated that the vegetable oil from the seed is promising for food consumption. This work demonstrates that further investigations are still necessary to determine the chemical composition and the toxicological characteristics of the species in order to support subsidies for the possible development of new drugs. Such future investigations may include the isolation of its substances, an analysis of its pharmacological activities, and a deepening of the understanding of the mechanisms of action of its various plant products.
