The aim of this study was to determine the effect on metabolic indicators (total cholesterol, triacylglycerides, HDL, LDL and glycemia) in university students, after the daily consumption of 1.00 g of a cocoa paste bar (PCB) and 0.50 g of a white chocolate bar (BCB) during two months. The population was characterized according to their sex, weight, height, body mass index (BMI), physical activity and diet. The pre- and post-metabolic levels were measured in the control group (BCB) and experimental group (BPC). The students have normal weight (22.90 kg/m2 and 24.99 kg/m2), average physical activity was predominat (55.60 %) and their nutrition was inadequate. The study groups presented metabolic levels within the normal parameter. La sarcopenia es considerada un síndrome geriátrico causado por múltiples factores, como una ingesta deficiente de proteína y la inactividad física. Este padecimiento representa una disminución de la calidad de vida, por lo que es importante prevenir y evitar su progresión. Y como parte del tratamiento no farmacológico se ha propuesto aumentar el aporte de proteína y aminoácidos, junto con la realización de ejercicio. Por lo anterior, el objetivo de esta revisión fue recopilar información del efecto de los cambios en la dieta, uso de suplementos y ejercicio como parte del tratamiento no farmacológico de sarcopenia para identificar cual tiene mejor efecto en los adultos mayores. Para la elaboración de este trabajo, se realizó una búsqueda en bases de datos electrónicas y se consideraron artículos en inglés y español desde el año 2011 al 2021, utilizando palabras clave como: sarcopenia, proteína, aminoácidos esenciales, leucina, suplementos, masa muscular y ejercicio. La información recopilada evidencia que el incremento en la ingesta de proteína de calidad o el uso de suplementos de proteínas de suero de leche, aminoácidos esenciales (principalmente leucina) y vitaminas (en especial vitamina D), ejerce un efecto positivo en el crecimiento muscular, aumentando la fuerza y rendimiento físico de los adultos mayores, estos efectos fueron más notorios en aquellos estudios en los que se integró una rutina de ejercicio constante. Sin embargo, aún falta establecer las características del tratamiento nutricional y las recomendaciones de ejercicio que puedan ser aplicadas para población mexicana.
En el estado de Hidalgo, México, se consumen diferentes especies de avispa y se utilizan en diferentes preparaciones culinarias. Sin embargo, hay pocos estudios disponibles sobre su composición de macronutrimentos y micronutrimentos. Por lo tanto, el objetivo de este trabajo fue recopilar información de la composición de macronutrimentos y micronutrimentos de diferentes especies de avispas que se consumen en el estado de Hidalgo y comparar su concentración con alimentos convencionales. Se realizó una búsqueda bibliográfica a través de bases de datos electrónicas. Las especies de avispa contienen porcentajes altos de proteínas (31-63 %) y lípidos (22-62 %), por lo tanto, son una buena fuente de estas macromoléculas. Entre los ácidos grasos reportados para la orden Hymenoptera los predominantes son los ácidos grasos insaturados (69.94 %) y en menor concentración los ácidos grasos saturados (29.88 %), y contiene una concentración superior de micronutrimentos comparado con alimentos convencionales como vitamina C (32.10-36.14 mg/100 g), tiamina (0.21-1.05 mg/100 g), riboflavina (0.05-1.70 mg/100 g) y niacina (0.47-12.40 mg/100 g), por lo que las avispas pueden ser una opción para la preparación de platillos.
