O presente estudo buscou analisar a qualidade de leites comercializados nos centros urbanos da cidade de Sobral-CE. Foram recolhidas as amostras, A, B, C, D e E, nas mesmas foram realizadas análises físico-químicas de acordo com a metodologia empregada pelo Instituto Adolf Lutz (2008), referentes aos seguintes parâmetros: densidade, gordura, extrato seco total (EST), extrato seco desengordurado (ESD), pH e testes de alizarol, acidez titulável, bicarbonato de sódio e amido, onde para cada respectivo resultado foram feitas comparações com a legislação vigente, com o objetivo de atestar se estavam ou não de acordo com os parâmetros estabelecidos. Desse modo para a densidade das amostras, não foram reconhecidas possíveis inadequações uma vez que todas se encontram com densidade relativa entre 1,028 e 1,034. Nas amostras, B, C e D demonstraram carência de matéria gorda. No quesito de Extrato Seco Total as amostras que indicaram conformidade foram A, D e E se apresentando constante no Extrato Seco Desengordurado apenas A e D. O teste de pH dos exemplares apontou acidificação em todos os casos o que por associação já preconiza o resultado do teste de alizarol, que mais uma vez confirmou o estado acidificado dos leites. A análise de acidez titulável expressa em graus Dornic mostrou que as amostras C e E concordavam com a legislação, porém, dentro do limite de 18 °D, sugerindo sua iminente acidificação com o passar do tempo. Por fim, nas análises de bicarbonato de sódio e amido não foram relatados casos positivos o que indicada a sanidade no que se diz respeito a fraudes que buscam mascarar a acidificação por adição de alcalinos ou molhagem com adição de reconstituintes, estes como o amido. Portanto, foi possível destacar que das cinco amostras analisadas, nenhuma se mostrou apta a consumo, estando fora do padrão principalmente ao que se diz respeito a acidificação do leite, se mostrando levemente e bastante ácidas.
