ResumenSe evaluó el efecto de la adición de salvado de trigo (en concentraciones 0, 1, 3 y 5% p/v) y el tiempo de almacenamiento en las propiedades fisicoquímicas y sensoriales del yogurt de leche de búfala. Al producto obtenido se le realizaron pruebas fisicoquímicas (acidez, pH, materia grasa, sólidos totales, sinéresis y densidad) y análisis de aceptación sensorial utilizando una escala hedónica de 9 puntos con 50 catadores. La adición de salvado de trigo influyó de manera directamente proporcional sobre la acidez, sinéresis, sólidos totales y densidad, e inversamente sobre el pH y la aceptación sensorial del producto. Durante el tiempo de almacenamiento se observó un aumento de la acidez y sinéresis, lo cual evidenció pérdida de calidad del producto. El análisis sensorial mostró que el yogurt de leche de búfala con 1% de adición de salvado de trigo presenta características organolépticas similares al yogurt con leche de búfala sin adición de fibra. Palabras clave: yogurt, leche de búfala, salvado de trigo, análisis sensorial, producto lácteo AbstractThe effect of adding wheat bran (at concentrations of 0, 1, 3 and 5% w/v) and of the storage time on physicochemical and sensory properties of buffalo milk yoghurt were evaluated. Physicochemical tests, such as acidity, pH, fat, total solids, syneresis and density were done and sensory acceptance analysis using the 9point hedonic scale with 50 tasters were performed. The addition of wheat bran directly influenced acidity, syneresis, total solids and density, and inversely influenced pH and sensory acceptance of the product. During the storage period there was an increase in acidity and syneresis, which showed loss of product quality. Sensory analyses showed that buffalo milk yoghurt with 1% of wheat bran presented organoleptic characteristics similar to that of yoghurt without bran addition.
En el presente estudio se evaluó el efecto de la adición de salvado de trigo (0, 1, 3, 5% p/v) y el tiempo de almacenamiento en el comportamiento reológico del yogurt de leche de búfala. A la leche de búfala se le realizaron análisis de materia grasa, presencia de antibiótico, sólidos totales, acidez y pH. Para las medidas reológicas se utilizó un viscosímetro Brookfied modelo DV-II+Pro, ajustando los datos al modelo de Oswald de Wale. El yogurt presentó un comportamiento seudoplástico y tixotrópico. La adición de salvado de trigo influyó de manera directamente proporcional sobre los parámetros reológicos, haciéndolo más consistente y menos seudoplástico. El tiempo de almacenamiento lo hizo de manera inversamente proporcional al índice de consistencia y directamente proporcional al índice de flujo, siendo menos consistente y con una tendencia a fluido newtoniano.
This study investigated the effect of the addition of starch from “hawthorn” yam ( Dioscorea rotundata ) and “creole” yam ( Dioscorea alata ) at different concentrations (0.1%, 0.3%, and 0.5% w/w) on the physicochemical and sensory properties of stirred-type yogurt. Pectin (0.3% w/w) was used as a reference stabilizer. Yogurt with yam starch presented 13.38% less syneresis than yogurts with pectin. At the sensory level, the most accepted treatment was yogurt with “creole” yam starch at 0.1% w/w. During 21 days of storage, yogurt with yam starch (“creole” and “hawthorn”) at 0.1% w/w showed a decrease in syneresis between 7% and 8%, while in those with pectin, syneresis remained practically constant in this period. Yogurt with yam starch was characterized as a pseudoplastic fluid, with a lactic acid bacterial count according to NTC 805. Yam starch can be used as stabilizer because it improves the physicochemical, sensory, and rheological characteristics of stirred-type yogurt. Especially the “creole” yam starch (0.1% w/w), which presents the best preference by consumers.

La mazamorra fue elaborada teniendo en cuenta un procedimiento a nivel artesanal, variando las concentraciones de leche y plátano en las formulaciones y el tiempo de cocción (15 a 25 minutos). Estos tratamientos fueron evaluados por un panel de 100 catadores no entrenados a través de una prueba de preferencia, utilizando una escala hedónica de 9 puntos. La mejor formulación de mazamorra de plátano es la constituida por una concentración de plátano y leche del 21% (p/p) y 52% (p/p) respectivamente, con un tiempo de cocción de 25 minutos a partir de su hervor. Elaboration Process of Plantain Mazamorra AbstractThe objective of this research was to evaluate formulations for elaboration of plantain mazamorra, selecting the best according to a panel of acceptance. The plantain mazamorra was prepared considering a procedure at the artisanal level; varying the concentrations of milk and banana in the formulations and the cooking time (15 to 25 minutes). These treatments were evaluated by 100 untrained tasters through a preference test, using a 9-point hedonic scale. The best formulation of plantain mazamorra is formed by a banana and milk concentration of 21% (w/w) and 52% (w/w), respectively, with a cooking time of 25 minutes after boiling. This formulation has a non-Newtonian behavior with thixotropic characteristics.
