Resveratrol, (3, 5, 4'-trihydroxystilbene) is a non-flavonoid polyphenol stilbene synthesized by plants when damaged by infectious diseases or ionizing radiation. Although present in more than seventy plant species, grapes and wine are the major dietary contributors of resveratrol, responsible for 98% of the daily intake. In 1992, Renaud and De Lorgeril first linked wine polyphenols, including resveratrol, to the potential health benefits ascribed to regular and moderate wine consumption (the so called "French Paradox"). Since then, resveratrol has received increasing scientific interest, leading to research on its biological actions, and to a large number of published papers, which have been collected and discussed in this review. The relatively low amounts of resveratrol measured in wine following moderate consumption, however, may be insufficient to mitigate biological damage, such as that due to oxidative stress. On this basis, the authors also highlight the importance of viticulture and the winemaking process to enhance resveratrol concentrations in wine in order to bolster potential health benefits.

Sulphur dioxide is used in the vinification process as an antimicrobial agent, but it is also considered as an important risk factor for liver diseases. Stilbenes have inhibitory effects on the growth of lactic acid bacteria strains isolated from wine. The authors investigated the viability of obtaining free-SO 2 resveratrol-enriched red wines. Substitution of sulfite (7 g/100kg) for resveratrol (150 mg/L and 300 mg/L) in the vinification process did not change the basic physical and chemical properties of wine or its sensorial profile. To the best of the authors' knowledge this is the first time that this type of vinification procedure is reported.

Abstract. Currently partial alcohol reduction of wine is in the focus of research worldwide. There are several technologies available to achieve this target. These techniques are either based on distilling or membrane processes. Osmotic distillation, one of the possibilities, is a quite modern membrane process that can be used. During that process, wine is pumped in counter flow to water along a micro porous, hydrophobic membrane. The volatile components of the wine can permeate that membrane and are dissolved in water. The driving force of that process is the vapor pressure difference between the volatiles on the wine and water side of the membrane. The aim of this work was to determine if the alcohol reduction by osmotic distillation can change the isotopic relation in a wine. Can this enological practice change the composition of a wine in a way that an illegal water addition is simulated? Different wines were reduced by 2% alcohol v/v with varying process parameters. The isotopic analysis of the O 16/18 ratio in the wine were performed according to the OIV methods (353/2009) These analyses showed that the isotopic ratio is modified by an alcohol reduction of 2% v/v in a way that corresponds to an addition of 4-5% of external water.

Se evaluaron 95 vinos experimentales, cosecha 2016, tanto en su estado puro (100%) como a distintos porcentajes de combinación (90; 85; 80; 75; 60%), con el fin determinar el porcentaje mínimo de una variedad que debe tenerse en cuenta en un corte de vino etiquetado como “variedad única”. Los respectivos cortes de las variedades bajo estudio (Malbec, Cabernet Sauvignon, Bonarda, Syrah, Merlot, Tempranillo, y Aspirant Bouchet) fueron supeditados al Análisis Descriptivo Cualitativo (se evaluaron 6 atributos olfativos/gustativos), y al Análisis Discriminativo Comparativo (2 repeticiones y 14 determinaciones), contando con un panel de expertos de tipo descriptivo (N = 7). Finalmente los datos sensoriales fueron analizados a través de la Prueba del Signo con diseño de muestras apareadas, a través del cual, la mayoría de los cortes de vinos por debajo del 85% mostraron diferencias significativas (P < 0.05) con respecto al vino patrón (100%). Esto es, se identifica organolépticamente aquella variedad que se encuentra en mayor proporción, cuando el vino está constituido con un mínimo de 85% de dicha variedad.

Abstract. The aim of this communication is to show the advantages of the use of wine alcohol as a preservative of must and its recovery through a system of evapo-destillation of reverse flow. Currently, the industry uses sulfur dioxide in the conservation of musts destined for concentration. The problem about the use of sulfur dioxide in the conservation of musts is that not ensure an anti-fermentative stability whole, but mainly in that it is not recovered, thereby producing a consequent pollution. Moreover concentrated musts usually contain a small presence of ethanol from micro-fermentations.At laboratory scale it was verified an excellent state of preservation of alcoholizated must, and all the alcohol used was recovered by distillation.The proposed system achieved a high reduction of production costs which is demonstrated by simulation process software, where it can show the energy savings compared to the conventional process for the same volume and concentration of product obtained.Another important advantage of this system is that higher alcohols and flavors would not be lost because is not necessary a desulfitation process, thus obtaining better quality products.
