El objetivo de esta investigación fue evaluar el efecto del empleo de nuez pecana, fibra de trigo y carne bovina obtenida de toretes engordados bajo un sistema silvopastoril intensivo (SSPi), sobre las propiedades fisicoquímicas, microbiológicas y sensoriales de hamburguesas. Mediante un diseño de mezclas se obtuvo la mejor formulación de la hamburguesa empleando como variables independientes los porcentajes de carne de toretes engordados bajo un sistema tradicional (ST), nuez pecana, fibra de trigo, aditivos y mezcla de vegetales, considerando como variables de respuesta el color, sabor, olor, textura y contenido de grasa. La mejor formulación obtenida del diseño fue replicada empleando carne de vacuno SSPi y se elaboró además una tercera formulación control con carne ST y sustituyendo la nuez y la fibra por grasa bovina. A las formulaciones resultantes se les realizó controles físico–químicos, perfil de ácidos grasos, análisis microbiológicos y evaluación sensorial mediante análisis cuantitativo descriptivo. La mejor formulación sugerida por el diseño estuvo compuesta por 65,7 % de carne ST: 11,1 % de nuez pecana; 1,1 % de fibra de trigo; 6,1 % de aditivos y 16 % de mezcla de vegetales. Las formulaciones elaboradas con adición de nuez y fibras (HST y HSSPi) resultaron significativamente superiores desde el punto de vista físico–químico y sensorial a la hamburguesa control (HC), con menores porcentajes de grasa, mejores propiedades de cocción y mayores contenidos en ácidos grasos poliinsaturados, así como una mejor aceptación sensorial, destacándose significativamente en estos parámetros la formulación elaborada con carne SSPi. Desde el punto de vista microbiológico no se encontraron diferencias significativas y todos los productos resultaron microbiológicamente aceptables cumpliendo con los parámetros establecidos en las normas.
<p>El objetivo del estudio fue determinar la composición de ácidos grasos en carne de cuy. El trabajo se desarrolló en la ciudad de Riobamba (Ecuador), y las líneas de cuyes utilizadas fueron tres: Criolla, Andina y Peruana mejorada. Se realizó análisis de varianza para las diferencias, comparación de medias según Duncan (p < 0.05). El contenido total de ácidos grasos saturados en la carne de este roedor no registró diferencias estadísticas entre las líneas estudiadas, ya que presentaron valores de 37,11, 37,01 y 36,71%, para cuyes Criollo, Andino y Peruano mejorado, respectivamente; igualmente, el contenido de ácidos monoinsaturados tampoco registró diferencias estadísticas entre las tres líneas, pues se reportaron niveles de 30,49, 29,26 y 31,44%, ni los niveles de ácidos grasos poliinsaturados, que fueron de 13,30, 11,04 y 14,22%.</p>
The industrialization of the heart of palm (palm heart), obtained from the sprout of a palm known as pejibaye, chontaduro, or peach palm (Bactris gasipaes Kunth), generates two main products: the fruit and the heart of the stem. The stem produces a highly perishable residue due to its high humidity, making drying an alternative to increase its useful life. The main objective of this study was to describe which of the selected mathematical models conform to better drying kinetics in samples (by-product) of palm heart (palm heart), according to the selected statistical criteria. Mathematical Modeling of the by-product drying curves (the heart of palm) was performed at two working temperatures (70 and 80 °C) and two groups, one minced and the other ground. The results of the water content were statistically processed to find the most convenient model among those proposed by other researchers. The calculation of the parameters of the different drying models was carried out with the STATISTICA version 8.0 program, using the non-linear estimation tool, according to the quasi-Newton algorithm estimation method. The results show that the models MR = exp(-k.tn) and MR = exp(-(k.t)n), called Page and modified Page respectively, were the best fit to the experimental data in all cases. Therefore, the models named Page and modified Page best fit the innovative information and the most suitable model.
