El empleo de extracto de Jamaica (Hibiscus sabdariffa) en diferentes concentraciones (2, 4 y 6%) como antioxidante natural en la elaboración de longaniza permite brindar alternativas saludables como conservante del embutido. La carne y grasa por su composición presenta varios fenómenos de alteración entre los cuales destaca la oxidación o enranciamiento producido por la exposición al aire lo cual ocasiona pérdidas en el comercio e industrialización. El tratamiento adecuado del extracto de Hibiscus sabdariffa se determinó mediante pruebas bromatológicas, sensoriales y evaluación de la actividad antioxidante en función del tiempo. Se elaboró el embutido con carne de cerdo y grasa principalmente como materias primas para luego ser molidas y mezcladas formando una pasta gruesa junto a los demás ingredientes. Los resultados determinaron que el 4% de adición del extracto de Hibiscus sabdariffa proporciona aceptables características bromatológicas y sensoriales. La evaluación de actividad antioxidante determinó que el producto incorporado el 4% proporciona mejores cualidades de conservación, resultado que corrobora al de la evaluación sensorial en dónde el producto presenta apariencia estable y coloración aceptable con el mismo tratamiento. El análisis bromatológico presenta variaciones en las concentraciones de proteína, grasa, agua, carbohidratos, minerales, al ser comparados los resultados del día 1 versus día 30 demostraron que el tiempo recorrido influye directamente en los resultados creando una reducción de cada componente por la deshidratación en el tiempo transcurrido.
Se evalúa un extracto polifenólico hidroalcohólico de la almendra de Theobroma cacao L. como antioxidante natural en chorizo fresco. El propósito de la investigación fue formular el chorizo fresco con la incorporación de 2, 4 y 6% del extracto para mejorar el tiempo de conservación. Se determinó el porcentaje adecuado mediante pruebas bromatológicas, microbiológicas y sensoriales, así como con la evaluación de la actividad antioxidante,en función del tiempo,por diferentes métodos (Folin-Ciocalteu, FRAP y ABTS). Los resultados determinaron que el 4%de adición de polifenoles brinda mejores características bromatológicas y físico–químicas. En el análisis microbiológico para recuento de aerobios mesófilos, coliformes totales y presencia de E. coli; en el caso de bacterias aerobias mesófilas existe un decrecimiento en el transcurso del tiempo en todos los tratamientos. La evaluación de actividad polifenólica señala que todas las dosis de polifenolesincorporadas al producto tienen una tendencia a subir los niveles de polifenolestotales en el chorizo fresco. Al incorporar 6% de polifenoles existe un incremento de la actividad polifenólica y por ende actividad antioxidante.La evaluación de actividad antioxidante por el método FRAP, determinó que el producto final incorporando 2%, 4% y 6% existe importante actividad antioxidante. Esta evaluación se corrobora con la valoración sensorial al visualizarse que el producto con el 4% presenta mejores características organolépticas (olor y apariencia). En la evaluación sensorial, la formulación de chorizo fresco con la adición del 4% de polifenoles de la almendra de Theobroma cacao L. presenta las mejores cualidades organolépticas, con mayor aceptabilidad del producto en los consumidores. En el análisis bromatológico, la proteína presenta una mayor concentración es los tratamientos con el 2 y 6% de polifenoles incorporados.
El emprendimiento estudiantil a nivel universitario dentro de carreras de producción es uno de los ejes importantes en el desarrollo de las regiones, este tiene que ir de la mano de estrategias de distribución tratando de formar emprendedores y administradores de sus propios emprendimientos, es por eso que este trabajo mide el nivel de consumo de infusiones de plantas aromáticas en la Ciudad del Puyo, Ecuador; definidas con un 78 % de consumo. La metodología que se aplico es inductiva con un enfoque cuantitativo, de perspectiva empresarial, con un alcance de la investigación exploratoria y descriptiva, mediante el levantamiento de una herramienta (encuesta) para medir la percepción. Como conclusión se definió que la frecuencia de consumo de infusiones se determina que se lo hace de 2 a 3 veces por semana con el 59 %, definidas que el 44 % de consumidores lo hacen por temas de salud, el 56 % lo consumen en la noche, tomando en cuenta la importancia de consumo de plantas con el 56 %, en relación al gusto de las especies se puede observar que el 24 % prefiere la hierba luisa, el 23 % la Jamaica y el 21 % la guayusa. En relación al apoyo de este emprendimiento estudiantil tenemos un 83 % de personas que apoyarían nuestra propuesta de infusión, se definió un plan de marketing mix basado en los resultados y adaptado a la situación de la ciudad. Abstract Student entrepreneurship at the university level within production careers is one of the important axes in the development of the regions, this has to go hand in hand with distribution strategies trying to train entrepreneurs and managers of their own ventures, that is why This work measures the level of consumption of infusions of aromatic swamps in the City of Puyo, Ecuador; defined with a 78% consumption. The methodology that is applied is inductive with a quantitative approach, from a business perspective, with a scope of exploratory and descriptive research, by raising a tool (survey) to measure perception. In conclusion we define that the frequency of infusion consumption is determined to be done 2 to 3 times per week with 59%, defined that 44% of consumers do it for health issues, 56% consume it at night, taking into account the importance of consumption of plants with 56%, in relation to the taste of the species it can be observed that 24% prefer the lemon verbena, 23% the Jamaica and 21% the guayusa. In relation to the support of this student entrepreneurship we have 83% of people who would support our infusion proposal, a marketing mix plan based on the results and adapted to the city situation was defined. This study evaluated the effect of the inclusion of rejected taro tuber flour (RTTF) on the productive performance in commercial hybrid pigs (Landrace × Duroc × Pietrain) during their post-weaning period. The experiment was established under a completely randomized design, comprising four treatments (0, 10, 20, and 30% inclusion of RTTF in the diet), using a total of 60 piglets with 15 repetitions each. The average daily feed intake (ADFI), average daily gain (ADG), feed conversion (FC), final body weight (BW), presence of diarrheas, mortality, and production cost, were determined. RTTF showed a high dry matter content, nitrogen-free extracts, gross energy, aspartic acid, glutamic acid, potassium, iron, polyphenols, and antioxidant activity. RTTF inclusion in the diet of pigs in the entire period (30-58 d) did not cause diarrhea or deaths and showed a quadratic effect on BW (p < 0.001) and ADFI (p < 0.001) and produced a linear effect on ADG (p = 0.006), FC (p = 0.003) and production cost (p < 0.001). In conclusion, the inclusion of RTTF in the diet of pigs after weaning (30-58 d) ranging between 0 and 30 % showed no effect on BW and ADFI, with a slight decrease in ADG and FC and a linear effect on production cost reduction.
