El objetivo del estudio fue elaborar una bebida funcional a base de cáscara de piña (Annanus comosus), barba de choclo (Zea mays) y hojas de moringa (Moringa oleífera) saborizada con extracto de maracuyá (Passiflora edulis). El estudio tuvo un diseño completamente al azar (DCA). Se realizó un análisis fisicoquímico y evaluación sensorial aplicándose una escala hedónica de nueve puntos a 30 panelistas consumidores entre 30-70 años. Se utilizaron ANOVA y la prueba de Tukey, para seleccionar la formulación de mayor aceptabilidad, con nivel de significancia estadístico p <0,05. Las seis formulaciones pasteurizadas y envasadas presentaron 5 °Brix en promedio y adicionando sucralosa, se incrementó la percepción del dulzor hasta un valor de 14° Brix y un pH promedio de 3,6. La evaluación sensorial mostró que la F1 obtuvo la mayor aceptabilidad (48 % de extracto de cáscara de piña, 32 % de extractos de barba de choclo y hojas de moringa y 20 % de extracto de maracuyá). Se evidenció que la F1 tuvo diferencia significativa (p< 0,05) con las demás formulaciones en los atributos de sabor y color en las categorías me gusta muchísimo y me gusta moderadamente. Se concluye que F1 fue la bebida funcional con mayor aceptación.
El objetivo de la investigación fue formular una sopa deshidratada enriquecida con harina de zapallo “loche” (Cucurbita moschata Duch.), cañihua (Chenopodium pallidicaule) y pescado “bonito” (Sarda chilensis chilensis), fortificada con DHA de la microalga Schizochytrium sp. Se deshidrataron harina de bonito y vegetales a 50°C - 60°C, hasta obtener una humedad del 3% y ausencia de pardeamiento no enzimático, con lo cual se formularon y evaluaron sensorialmente (aspecto, olor y sabor) seis (6) sopas deshidratadas por un panel de 30 niños, de 3 a 6 años, utilizando la escala hedónica facial de cinco puntos. Se aplicaron las pruebas ANOVA y Tukey con un nivel de significancia estadística p<0,05. Hubo diferencia significativa en el atributo apariencia con F5 (5 g de pescado “bonito” y 5 g de zapallo “loche”). Se concluyó que F5 tuvo la mejor aceptabilidad sensorial.
