RESUMENEfecto de las altas presiones hidrostáticas respecto a la pasteurización térmica en los aspectos microbioló-gicos, sensoriales y estabilidad oxidativa de un paté de aceituna.En el presente trabajo se valoró el efecto del procesado por altas presiones hidrostáticas (APH) como método alternativo al tratamiento térmico de pasteurización para la conservación del paté de aceituna y su estabilidad durante el almacenamiento en refrigeración, mediante la caracterización de los aspectos microbiológicos, físico-químicos y sensoriales. El paté de aceituna fue elaborado partiendo de aceituna de mesa verde deshuesada y envasada en salmuera, a la cual, previo lavado con agua, se le adiciona zumo de naranja natural, aceite de oliva virgen, especias y sorbato potásico. Para evaluar el efecto del procesado, se aplicaron cuatro tratamientos de APH (450 y 600MPa durante 5 y 10min) y otro de pasteurización térmica (80 °C durante 20min), comparán-dose con el producto no procesado. Las muestras tratadas con APH presentaron, frente a las tratadas por pasteurización térmica, una reducción en la presencia de microorganismos, un aumento de su estabilidad oxidativa, una mayor aceptación sensorial; y respecto a las coordenadas colorimé-tricas mayor claridad y menor pardeamiento. El estudio de la vida útil del producto en refrigeración, indicaría la viabilidad de la aplicación de la tecnología de APH para obtener alimentos con vida útil similar a la obtenida con el tratamiento tradicional de pasteurización, pero con mejor calidad sensorial. SUMMARYEffect of high hydrostatic pressure versus thermal pasteurization on the microbiological, sensory aspects and oxidative stability of olive pate.The present study examines the effect of high hydrostatic pressure processing (HHP) as an alternative to thermal pasteurization treatments for the conservation of olive pate and its stability during refrigerated storage, through the characterization of microbiological, physico-chemical and sensory aspects. The olive pate was made with green, pitted table olives packed in brine. Orange juice, olive oil, spices and potassium sorbate were added to the olives after being washed in water. To evaluate the effects of processing, four treatments of APH (450 and 600MPa for 5 and 10 min) and a thermal pasteurization (80 °C for 20 min) were applied to compare them with the unprocessed product. APH-treated samples showed a further reduction in the presence of microorganisms, an increase in oxidative stability, a higher sensory acceptance, greater clarity and less browning regarding the colorimetric coordinates, in comparison with those treated by thermal pasteurization. The shelf-life of the refrigerated product would indicate the feasibility of the application of the HPP technology for food with similar shelf-life to that obtained with the traditional treatment of pasteurization, but with a better sensory quality.
SUMMARY:The characterization of olive oils from seven representative fruit varieties (Arbequina, Carrasqueña, Corniche, Manzanilla Cacereña, Morisca, Picual, and Verdial de Badajoz) from the southwest of Spain is carried out according to antioxidant capacity of the phenolic fraction and oxidative stability in different ripening stages. Antioxidant capacity is measured through the reduction of a 2,2′-azino-bis-3-ethylbenzthiazoline-6-sulphonic acid radical cation previously oxidized with peroxidase/hydrogen peroxide. The decrease in absorbance at 730 nm at 3 min was measured. Values like Trolox Equivalents Antioxidant Capacity and oxidative stability varied from 0.6 to 2.5 mmol Trolox·kg -1 oil and 28.3 to 170.9 hours Rancimat respectively. The best positive correlation between total phenolic compounds and antioxidant capacity were in the Carrasqueña and Arbequina varieties. The rest showed moderated correlations. Correlation between antioxidant capacity and oxidative stability was found in a range from 0.66 to 0.97, depending on varieties. Se caracterizaron Aceites de Oliva Virgen procedentes de siete variedades de aceitunas (Arbequina, Carrasqueña, Corniche, Manzanilla Cacereña, Morisca, Picual y Verdial de Badajoz) representativas del sur-oeste de España de acuerdo a la capacidad antioxidante de su fracción fenólica y a su estabilidad oxidativa, en diferentes estados de maduración. La capacidad antioxidante se midió por la disminución de absorbancia a 730 nm, producida por la reducción del radical ácido 2,2′azino-bis-3-etilbenzotiazolin-6-ácido sulfónico, a 3 min del inicio de la reacción en presencia del extracto fenólico. Los valores de capacidad antioxidante y de estabilidad oxidativa variaron de 0,6 hasta 2,5 mmol Trolox·Kg -1 y de 28,3 hasta 170,9 horas respectivamente. La mejor correlación entre los compuestos fenólicos y la capacidad antioxidante se observó para las variedades Carrasqueña y Arbequina. Por otro lado, la correlación entre la capacidad antioxidante y la estabilidad oxidativa se encontró dentro de un rango entre 0,66-0,97 dependiendo de la variedad. PALABRAS CLAVE:
Olive fruits and virgin olive oils from a super‐high‐density olive orchard cv. Arbequina under different irrigation treatments (Control, RDI1, RDI2) were characterized by their pigment profile, CIElab colorimetric coordinates, oxidative stability and antioxidant capacity during the olive seasons 2011 and 2012. The control treatment were irrigated according to the total evapotranspiration of the olive grove (100% ETc), while RDI1 and RDI2 consisted of moderate and severe deficit irrigation, respectively. Olive fruits from severe water deficit irrigation treatment (RDI2) showed a significantly greater concentration of pigments compared to the others. In addition, the ratios a*/chlorophylls and chlorophylls/carotenoids indicated a delayed maturation in these olives. Irrigation treatments significantly affected the yellow component (b*) of the virgin olive oils contained. A reduction of 75% in the water applied (RDI2) produced a strong increase in lutein‐zeaxanthin content (38%) and chlorophyll a (50%), oxidative stability, that ranged from 8.37 h (Control) to 13.23 h (RDI2) and antioxidant activity compared to Control. However, the oil production from RDI2 decreased approximately a 49%.
