Several of the polysaccharide constituents of yeast, including glycogen, yeast gum, and several water insoluble compounds, have been described by a number of investigators.1-8 The chemical structure of one of these constituents, mannan, was studied in detail by Haworth, Hirst and Isherwood.8 These authors showed that the yeast mannan differs fundamentally in structure from the mannan of the ivory-nut9 and that synthesized from glucose by Penicillium Charlesii G.Smith.
