In order to improve the mineral, vitamin composition, and nutritional value of flour confectionery products, new recipes for the "Flori" and "Janet" cookies baked from organic raw materials have been devised. Fully organic raw materials are used in the formulations of both products. The composition of cookies includes spelt flour, cornflour, coconut sugar, butter, dry coconut milk, sea buckthorn oil, hemp oil, lemon balm powder. The organoleptic assessment of cookies was conducted according to a 50-point scale developed by the authors of this paper. The developed samples ranked high on the tasting score: "Flori" (48.12) and "Janet" (49.25). The fat content was decreased in both samples; in the "Flori" sample ‒ by 0.9 g/100 g, and in the "Janet" sample ‒ by 1.2 g/100 g. The protein content increased in the samples, especially in the "Flori" cookies ‒ by 2.3 g/100 g. The "Janet" cookie sample demonstrated the lowest energy value of 380.50 kcal/100 g. The samples were distinguished by the low content of mercury, cadmium, and arsenic. The content of all mineral elements except for sodium increased in the developed biscuits. The potassium content increased by 2.34 times in the "Flori" biscuits and by 2.29 times in the "Janet" biscuits. The calcium content in the "Flori" cookies increased by 3.13 times, in the "Janet" cookies ‒ by 3.64 times. The content of manganese in both samples increased noticeably. Consuming the developed organic cookies makes it possible to increase the level of meeting the human body's requirements for macro- and microelements. The Ishikawa method was used to identify the main factors affecting the safety of cookies. A flowchart of cookie production was drawn up; the critical points were identified. These include the acceptance inspection of raw materials, heat treatment. The data obtained can be used by the confectionery industry to expand the range of organic products.
Анотація. В роботі наведено результати досліджень змін показників якості та безпечності розробленого печива органічного «Флорі» та «Жанет» протягом 4 місяців зберігання у паперових пакетах типу «саше» за температури (18±2)°С і відносної вологості повітря 75%. Для дослідження використані стандартні методи і методики. Органолептичну оцінку зразків проводили на основі 50-бальної оцінки. Вологість було визначено висушуванням до постійної маси за температури 105°С. Пероксидне число у ліпідній фракції печива було досліджено йодометричним методом. Мікробіологічні дослідження проводили за допомогою обчислення колоній, які зростають на твердому живильному середовищі після інкубації за температури 30°С. Проаналізована динаміка органолептичних показників. Встановлено, що найбільших змін зазнали показники «смак», «післясмак» та «вираженість добавки». Наведені результати визначення пероксидного числа у ліпідній основі печива. Наприкінці зберігання пероксидне число у контрольному зразку було у 1,3 раза більше, ніж у розробленому органічному печиві «Флорі» та в 1,2 раза більше, ніж у печиві «Жанет». У якості антиоксиданту в розроблених зразках печива була використана меліса. Досліджено динаміку зміни вологості у розроблених зразках. Наприкінці зберігання найбільший показник вологості було зафіксовано у печиві «Жанет» -8,5%, яке відрізнялося найвищою вологістю також на початку зберігання. Після 4 місяців зберігання, вміст МАФАМ у дослідних зразках був меншим за гранично-допустимий. Найбільший вміст МАФАМ -3200 КУО/1 г спостерігався у контрольному зразку. Розроблені зразки органічного печива «Жанет» і «Флорі» мали однаковий вміст МАФАМ у кінці зберігання -3000 КУО/1 г. Подальші дослідження планується присвятити дослідженню збереженості органічного печива у різних температурних режимах та пакуваннях.
Досліджено вплив нетрадиційної сировини рослинного походження та натуральних добавок на формування споживних властивостей кексів поліпшеного складу. Визначено та науково обґрунтовано рецептурний склад і запропоновано модельні зразки кексів на основі проведеного аналізу органолептичних, фізико-хімічних показників, харчової і біологічної цінності. Для оцінювання органолептичних показників розроблено шкалу оцінювання, враховуючи показники: смак, запах, вид у розломі, колір, поверхня, форма, консистенція із введенням показника флейвор та побудовано профілограми зразків. На основі проведеної органолептичної оцінки встановлено, що розроблені кекси із внесенням у рецептуру нетрадиційної сировини володіють приємними смаком, ароматом та високо оцінені дегустаційною комісією. Завдяки зміні рецептури вдалося знизити енергетичну цінність виробів на 16-39 ккал/100 г. Нові зразки характеризуються підвищеним вмістом білка на 18,9-31,8 % (кекси без начинки) та в 1,6-1,7 разів (кекси з начинкою), зменшенням кількості жиру на 3,1-20,1 % та вуглеводів -на 4,7-14,9 %. Вміст незамінних амінокислот визначали за допомогою автоматичного аналізатора амінокислот Т 339. У нових виробах зріс вміст амінокислот в 1,1-1,9 разів порівняно із контрольним зразком. Жирнокислотний склад кексів визначали методом газової хроматографії на газовому хроматографі НР 6890. Співвідношення частки ненасичених жирних кислот до насичених в нових виробах зросло в 1,22-1,55 разів. Мінеральний склад визначали методом атомно-абсорбційної спектрофотометрії на атомно-абсорбційному спектрофотометрі С-115 ПК. Вміст мінеральних елементів зріс в 1,1-2,7 раза, а вітамінів у 1,2-2,9 раза.
